Slow Cooker Turkey Breast

For some reason this didn't work out for me. After only 4 hours on low, the turkey, though sitting in a pint or so of its own juices, was dried out on the inside and had no flavor. I used an onion soup mix that did not have MSG. The leading brands have MSG. Maybe using MSG would have made the recipe work.

Oven Baked Jambalaya

Absolutely phenomenal. I wasn't happy with all my meat choices at my grocer so I just used shrimp and Italian sausage that I cooked separately prior to adding them to the sauteed veggies, garlic and tomato paste. Since I had less meat, I put in less seasonings, tomatoes, rice and broth (about half). I kept it all on the stovetop so I could monitor the rice. Turned out exactly as I had hoped.

Big Germans

This was easy and fun to make. The sides of the "bowl" rose up so high in my oven, the tops were touching the coils. It's very entertaining to see. I sliced up strawberries to put in the "bowl", but I found just the lemon juice and powdered sugar added the perfect flavor. I will note that there was a shallow pool of butter in the bottom of my eggy pancake, which didn't bother me. I like buttery pastry, but I wanted to mention it.

This was very tasty and easy to make. I suggest adding a warm fruit topping or sauce when serving. Will also go great with ice cream.

Chocolate Cookie Buttercream Frosting

I reluctantly tried this as I do not like buttercream frosting which tends to be too airy in texture. I like frosting I can really sink my teeth into. I needed a chocolate frosting recipe and was looking for something simple and settled on this one. This is a rich and creamy frosting. It is nothing like the buttercream frosting I'm familiar with and I love it! Our cupcakes, topped with this frosting, flew off the counter they were so good. It did take more than 2 tablespoons of milk for the mix to go from powdery to smooth and creamy, though.

Jerk Seasoning

Easy to make and use. I pan fried some arctic char with the rub and it didn't stick to the pan nor burn. I fried the fish in olive oil in a cast iron skillet and the rub became a crisp coating, which I liked. However, the flavor didn't knock my socks off. It was too subtle for me. Not sure if the fish is to blame, but I probably won't use the recipe again.

Bacon Quiche

This is so cool! I love how the biscuit mix sinks to the bottom of the pie dish to form a crust. This is super easy. I'll definitely make it again!

Cornmeal Coating

Excellent with cod and I think I've also had good luck using it on catfish. I just had a little trouble keeping the coating on the cod when I tried to flip it. Maybe that's why you use only 3 oz fillets. Mine were pretty big.

Down-Home Sausage Gravy

Made a similar recipe once before and it turned out too salty. So for this recipe I used the lowest sodium sausage I could find and did not add any salt. Turned out great. Not salty, at all.

Pan Fried Catfish Filets

Absolutely fantastic! I rubbed the fish with Adobo seasoning on both sides before dredging it in the cornmeal coating. I did not use the milk. The fish already had enough moisture for the coating to stick to. I recommend seasoning the fish in some manner (eg salt and pepper or Adobo) before adding the coating. Doing so enhances the overall flavor. Also, this recipe creates a lot of cornmeal seasoning. Store some for later before using the rest to coat the fish, or else you'll be throwing away alot of excess cornmeal seasoning mix. Regarding concerns on cooking thick pieces of fish, I used a cast iron skillet which holds and distributes heat well. You can turn down the heat to slow down the cooking if needed. Thanks for the delicious recipe!

Serbian Cevapcici

My husband was raised on Cevapcici and claims this is the real deal. We don't have a grill so I baked them for 30 minutes in a 350 degree oven. They came out nice and brown on the outside and were cooked through on the inside. Very tasty.

Che Guevara's Ceviche

This was beautiful and full of color. I never had Ceviche before and found it to be too tangy for my taste. My husband, on the other hand, loved it and ate it all up. He finished the leftovers by putting them on top of pasta the next day. I omitted the shrimp and used two fillets of Orange Roughy. Overall, it wasn't bad.

Amy's Delicious Turkey Burgers

This was very satisfying. Taking other reviewers' leads, I cut down the pepper flakes to 1/2 teaspoon and turned the dish into a meatloaf. The dish had plenty of spice. I topped it off with chili sauce, put it in the oven at 350 degrees, and let it bake for an hour.

Classic Macaroni and Cheese

Wonderful! This was exactly how I had Mac and Cheese growing up. I used fresh milk since my evaporated milk had gone bad and it worked out just fine. My father used to use fresh milk too. Thank you so much for the recipe!
