Pork Tenderloin with Dijon Marsala Sauce

Delicious! Made a few adjustments- used a pork roast and browned in a dutch oven. After browning added some white cooking wine to just cover the bottom of the pan and transferred the dutch oven into a 325 oven for ~2.5hrs; for the sauce, subbed onion for the shallot. Served the pork with mashed fauxtatoes and sauteed green beans and it was amazing! Definately making this one again!!

Apple-Feta Tossed Salad

LOVE, LOVE, LOVE this salad- I've made it three times this week! scaled it down to about 6 servings, used 1 honeycrisp apple and a spring mix lettuce blend. Per other reviews I added olive oil to the dressing using about a 3:1 oil:vinegar ratio. I was stunned to hear my husband exclaim "this dressing is awesome" after his first bite- he's a devoted carnivore, and salads don't typically get his seal of approval- but this one's a winner!! Thanks so much for posting!!

Tangy Slow Cooker Pork Roast

Really, really good. I've been trying a number of different pork recipes lately, and my husband said this was the best one yet. I substituted red pepper flakes and a dash of cayenne powder for the hot sauce, but otherwise followed as written , just adjusting quantities for a smaller roast using the calculator. Had it for shredded pork sandwiches one night, and pork quesidillas another.

Apple Dip

This is so good. Made it yesterday with neufchatel cheese, 1/3c br. sugar, and just poured in the vanilla. didn't have a chance to try it then, but I've eaten it with two honeycrisp apples today and it's been a real effort to not just sit down with a spoon and polish off the rest. I've not been patient enough to let the dip soften to RT before I eat it, but imagine it would be even better if it could soften and be a bit more dippy. Will most definately be making this again...

Crunchy Bagel Chips

These chips are so easy, and highly addictive... I only make them when we're having company, otherwise I'd just sit down and snack until the whole batch is gone. I sub garlic powder for the salt and use Trader Joe's Everything bagels (I just keep them in the freezer until I need them, then thaw 2 or 3 in the fridge overnight), and the flavor is fantastic. Watch them closely after 15 minutes- they brown very quickly after that point.

Awesome Egg Salad with a Kick

this was really good - we had it for lunch on Triscuits, and it hit the spot! I scaled the recipe back to 6 servings, made a few small adjustments- white onion since that's what I had on hand, and omitted the bacon- didn't have any. I also just estimated the amounts I added to minimize clean-up - my proportions were close, but you could certainly tweak this recipe to taste. Definately one I'll be making again soon...

Yogurt Biscuits

These were very good- I added some dried chives to the dough, and needed to add just a bit of milk to get the dough to come together. I'll probably double the recipe next time... this only made four biscuits for us, and if I'd scored the dough into six, they would have been really small...

Lentil and Smoked Sausage Soup

Wow- this was fantastic! I didn't have any cabbage, and subbed healthy choice smoked sausage for the veg sausage, but other than that (and letting the soup simmer for a few hours) I kept to the recipe. Its even better after it has set for a day or two to develop the flavors. This recipe is a keeper- thanks for sharing!

Super-Delicious Zuppa Toscana

Based on what I had on hand I modified this recipe a bit, but it still turned out terrific! I used hot italian turkey sausage cooked with casings removed and 1tsp of red pepper, and omitted the bacon (didn't have any). I also replaced the potato with a head of cauliflower. I only had one can of chicken broth, so for the remainder I used water and chicken base. It was delicious! My husband loved it as is, but thought the bacon would make it even better, so I'll definately try that next time. This is a wonderful cold weather soup that will be in our regular rotation!

Spiced Honey Pretzels

Used mini twists instead of sticks, increased the butter to 1T, nuked the butter and honey for 30 seconds, and added a few dashes of cayenne and ground chipotle pepper to give it a bit more kick. They could still have a bit more heat for my taste, but my husband thought they were great. A quick and tasty snack that I'll definately make again. Thanks for the recipe!!
