My favorite things to cook
Not so much WHAT as HOW. I love to cook with my husband. We have a good rhythm and balance when we work together. It's okay to admit to the other when we're lost, need help, or think we've nailed it.
My favorite family cooking traditions
I'm Mexican on my father's side, so I grew up with enchiladas, homemade tortillas and salsas, and Jalapeños on the table for every meal. We've made tamales from scratch for the Christmas Eve meal for as long as I can remember. But I love many other cuisines as well.
My cooking triumphs
Even though I've been cooking since childhood, one of the best things I did to increase my confidence was a six-session cooking basics class from a professional chef's academy. As much as I love the Food Network, the hands-on experience trumps observing an expert ANY day. Thanks to the class, my Béchamel sauce ROCKS! Now-a-days, I'm comfortable adjusting recipes on the fly and improvising dishes from what we have on hand.

Slow Cooker Beef Pot Roast
Husband said he could have eaten the entire thing himself. Works really well with any type of root vegetable and the mushroom sauce on top is key to flavor. Seasoned the beef but did not rub it with flour and I think that gave a better sear. Cooked in Slow-cooker on low for about 10 hours because neither of us could have made it home from work sooner.

Coriander and Cumin Rubbed Pork Chops
Great payoff for so little effort. Tasted so flavorful -- even though I forgot the garlic! Didn't bother making a paste, using the spices as a dry rub instead on bone-in chops that I had patted dry.

Cream of Cauliflower Soup II
Made this last night and brought some to work today for my lunch. Yum! I let the potatoes and carrots simmer twice as long as called for (40 minutes) to make sure they were tender when I used the immersion blender. I also reserved about 1-2 cups of veggies before blending. I highly recommend eating this with big, crunchy croutons. My husband thinks it tastes more like a gravy so, why not! we plan on serving the rest of this over grilled chicken breasts for dinner tomorrow night.
