Banana Muffins II

These turned out delicious!!! My 7 year old made them with a little help from me. I was out of regular butter, I only had the sweet butter for sweet potatoes (honey, butter, powdered sugar, cinnamon) and used that instead. Added a little vanilla. They were wonderful!

Chicken Enchilada Soup II

I started recipe as written (except for using Quorn faux Chicken and vegetarian chicken broth). I put it in my crock pot on low overnight. When I tried it in the morning, it was super bland! I tripled the spices, added 3/4 jar of black bean salsa, extra faux chicken broth and doubled the enchilida sauce. Much better! I decided to add rice and corn in addition to the cheese. Topped with tortilla chips, salsa and sour cream. Delicious!! Definitely not a soup. More of a stew. Very thick and filling. I didn't have any issues mixing in the Masa. I like the texture it added.

Rosemary French Bread

Perfection! So easy to alter for a basic french bread too. I did add about a tablespoon of dried milk powder for a flakier crust. Turned out perfect in my bread machine! I was using the bread for my Christmas French Toast Casserole and it was the best it ever tasted thanks to this bread!

Corn, Sausage and Pepper Chowder

Seriously amazing! I made it vegtarian with no-chicken broth and Morningstar sausage links. I left out the peppers since I didn't have any. Doubled the spices. This is a keeper!!

Three Cheese Tortellini with Chicken Broth

Yum!! I used vegetarian chicken broth and added some dried parsley, minced garlic, pepper and italian seasoning while cooking and doubled the tortellini. Definitely a keeper!

Pseudo Sourdough for the Bread Machine

Such a versatile recipe!! I didn't use the barley or potato flakes, just bread flour and everything else the recipe called for. For my oil, I used Wildtree Roasted Garlic Grapeseed oil. For my second batch, I used homemade onion dip instead of plain sour cream. Delicious!

Made this before I became a vegetarian (for health reasons) and loved it then! Modified it vegetarian with vegetarian beef broth and MorningStar Crumbles and it tastes the same!!

Easy Chicken Tetrazzini

I made this recipe tonight with a couple of modifications because we are vegetarian! For starters, I made my own cream of no-chicken soup with 1 cup half no-chicken broth, 1 cup milk, 8 tablespoons butter, 6 tablespoons flour and salt/pepper. I used a large loaf of velveeta cheese instead of shredded cheese. Instead of water, I used more no-chicken broth. I used Quorn Chick'n instead of real chicken breasts. I used to make this before we became vegetarians and it tastes the same!

Smokin' Jack BBQ Sauce

Wonderful with only a couple changes to use what I had on hand. Omitted molasses, used 3/4 cup of red wine vinegar and about 3/4 cup of white vinegar. Also, several tablespoons of Franks and 2 additional tablespoons of prepared mustard in addition to dry mustard. Omitted smike. Perfect!

Steak Sauce

With the hot sauce, this tastes exactly like Heinz 57. Don't forget to add garlic powder, onion powder, and celery seed. Leave out the hot sauce if you want it more like A1.

Potato Leek Soup III

LOVE this soup!! We make it with a vegetarian no-chicken broth and then I add a little bit of poultry seasoning. I don't use heavy cream but will add rice milk or 2% milk. It's delicious!!!

This icing recipe is perfect!! This was exactly what I was looking for. I used non-hydrogenated shortening and pure vanilla, those were the only 2 things I did differently. Thanks for sharing!

I used 12 peaches but added only 2 cups of cane sugar and it was still very sweet! I also used the cook down method so I could avoid the pectin. Yummy!
