Oven Scrambled Eggs

Absolutely delicious and extremely easy. Made for ten people and everyone loved it! Good grinding of black pepper before baking is essential.

Banana Crumb Muffins

Chai Tea Mix

Garden Fresh Tomato Soup

Very good. Had plenty tomatoes in the garden. Made it today for a lunch I went to. Added a cup of cream and snipped chives, basil and flat-leaf parsley at the end. Also made crusty bread to go with it. Both disappeared in no time.

Whole Grain Waffles

very, very good. I made some applesauce in my slowcooker using a recipe from this site and wanted to use it in a recipe. Made these waffles for breakfast served with homemade pear conserve and we loved them. Will definitely be making them again-and will also make muffins using the batter next time.

Grilled Cheese Sandwich

UMMM! GOOD STUFF! Hubby's away for the weekend and i was thinking what to have that would be quick and easy. Looked in the cupboard and decided to make a toasted sandwich: Bread buttered outside, thin layer mayo inside, sliced cheese, thin slices mushrooms, salt, pepper, another layer cheese, bread buttered on outside. Toasted slooowly on stove to get cheese melty. Eat while watching favourite TV show.

Bread Pudding

Took it to a potluck. People thought it was 'nice' but no one thought it was special. I thought it was just ok as well. MAY make it again if I feel a craving for bread and butter pudding.

Ultimate Twice Baked Potatoes

Delicious!I tweaked the recipe a bit-baked the potatoes brushed with oil, salt, pepper, this made the skin quite crispy.Added fresh parsley, chives, mint, diced mushrooms, juice of one lemon, 1/4 cup sour cream, salt, pepper, 1 cup cheese, 1/4 cup milk, butter to mashed potato then put all back into shells, topped with extra parsley, chives, paprika and cheese and rebaked. I am a vegetarian so didn't use ham. It was still a big hit with the meat-eaters :-)

Creamy Banana Bread

Made it for afternoon tea and everyone loved it. I liked the texture, which was nice and moist but I like my banana bread to have more banana flavour-which this one didn't. Added lemon rind to mixture and would add more bananas next time. Other than the lack of banana flavour, the bread was good.

Blueberry Coffee Cake I

Made it today for a brunch and my friends absolutely loved it. I made some changes though:buttered AND floured cake pan. Made only half streusel and used half of that on the tin and half in the middle of the cake. Used 2 eggs, 3/4 cup sugar. Combined 1/2 cup milk, 1/2 cup sour cream and added it to egg mixture alternately with flour. Added 2 cups blueberries to the batter. Added a pinch of freshly ground cardamom. Cooked in tube pan for 45 mins.

Hershey's ® Hot Fudge Pudding Cake

Loved it-with a few changes: added a bit more milk until the pudding was not as thick and was more spreadable-sort of pancake mixture consistency; added 1/4 cup chocolate chips; put a tsp of coffee per cup of water for the sauce and used 1 1/2 cups of water instead of 1 1/4. I don't like my puddings too sweet so omitted the final granulated sugar and just used brown sugar. Will definitely make again.

Insanely Easy Vegetarian Chili

Delicious as a base.I decided to make it in the slow cooker on high for two hours with a few changes: drained the corn, added a can of undrained chilli beans and used a bouquet garni of fresh thyme, rosemary, sage, oregano, bay. Added freshly chopped parsley and basil just before serving. Made it last month and someone was asking for the recipe today! Must be good :-)
