Cream Puffs

The pastry on this is perfect...I have tried several others that called for shortening and they just did not turn out fluffy and puffy. They were also greasy and I followed the directions to the tee! Now these are perfect, so if you have had problems with other recipes give this one a try! I made a small batch to be sure they worked. I got my water butter mixture to a full rolling boil & pored the sifted flour in all at once and just kept stirring & almost instantly had a ball, which I poured into a glass bowl. I stirred my eggs in with a fork stirring very quickly. I did not add salt as I used salted butter. I made a spiced rum whipping cream that was sweetened , with a chocolate cinnamon glaze...They tasted good. I will also use this recipe for savory bites, with a smoked salmon filling. I really love this recipe and am VERY HAPPY I found it. I think to drop these by small teaspoons full is the way to really get a bite sized treat. I also agree with the person who said to use parchment paper. This has been fun and will us this recipe again. Thanks Shellie for submiting it...

Stuffing Recipe

This is really great for stuffing squash or small pumpkins. A nice range of flavors and very easy to add or take away some items if you would like. A very nice and versatile recipe. Easy to make ahead.

Rhubarb Fool

Add a little corn starch to mixture right before it is finished then it will set up nicer. Try a pineapple/papaya juice instead of orange juice. A really good recipe for rhubarb.

Aunt T's D.W.I. Rum Cake

Perfect in almost every way, but to reduce the alcohol and intensify the rum flavoring I add the rum and the butter first bring to a boil, add the sugar, and water, and bring to a slower boil, till it is a sticky glaze and no longer a syrup. I also glaze som walnuts to put on top for decoration. I just do not like the alcohol as much as the flavoring.

Pumpkin Curry with Lentils and Apples

My son is a vegetarian and I like to omit meat from my diet once or twice a week. I have lost 25 pounds by doing nothing else and walking. It was full of interesting flavor and full of great vitamins. Who can ask more of food??

Bread Machine Calzone

OK...Let's start!! Easy!! The bread machine does all the real work...It even proofed it. I used milk instead of water because I did not have powder milk on hand. I also added teaspoon extra sugar, and a teaspoon extra yeast. I like mine with a little more yeasty sweet flavor. Also I would put this in a 350 degree oven and after 15 minutes turn it down to about 300 to 325 degrees depending on your oven, that is if you like a less dark crust. Plus I used spinach, cheeses,sausage, pepperoni, peppers, onions and drained olives, so needed the extra cooking time, for the inside to cook and the outside not be over cooked, I just turned the oven down. this recipe would make great Breadsticks...just add some herbs and garlic and onion to the mixing bowl...Very Tasty and Thanks for submitting it!!

Jalapeno Popper Spread

OK...My tweak is that I roast fresh jalapenos on the grill, till golden not burnt,( you can broil them) seed and dice them. Forget mayonaise and go for light sour cream and light cream cheese. Mince a 2-4 teaspoons fresh onion, finely grate some cheese,(cheddar or Monteray Jack are my faves). A a couple of tablespoons of finely chopped cilantro. Mix it all together & chill...Now if you want to get exotic, mix in some chopped cooked shrimp and serve it in a papaya, canatlope. Serve it with cucumber strips or fruit wedges. the cool & hot compliment each other very well.

Almond Chocolate Coconut Cookies II

I really played with this recipe. Instead I used raisins & some crushed pineapple only because I didn't have any chips...forget the vanilla & use the juice from the pineapple and add a litle extra butter...They tasted good. I wiish I would have had the chips though. I thought I did!! Kind of tropical good.

Puff Pastry

I tried thie recipe 3 times and they never puffed and were greasy rocks coming out of the oven!! I have no clue what I did wrong as I followed the instructions to a Tee...They seemed to work for everybody else. I did find another recipe that called for butter and they came out light and fluffy. The recipes were almost identical, but this one was with shortening, and the other was with butter, the others only cooked for 22 minutes and were done...But it was fun experimenting and that is why I only gave it two stars. I am not blaming the recipe, just saying it did not work for me...Lucky you, for those it did work for.
