Easy Lemon Cookies

Oh gosh these are good! I make these for a local soup kitchen and thank goodness I get them out of my house before I eat them all. I pick up the cake mixes when they go on sale for super cheap, it makes a quick, inexpensive but impressive cookie when you need one. For added oomph, instead of rolling in powdered sugar, I make a glaze with lemon juice and powered sugar and dipped the tops of the cooled cookies into that and then let dry. *heaven* Just like my grandma's lemon bars (without all the work).

Sausage and Egg Casserole

This is my favorite dish to bring to brunch at my local MOPS (Mothers of Preschoolers) group. It always quickly disappears. Its easy to make up the night before, so I often make it for busy (but special) mornings at home.

Exquisite Pizza Sauce

I recommend this recipe to all my family and friends. It really is exquisite! We reduce the sauce down (simmering on the stove) for awhile to concentrate and blend the flavors before using. It makes quite a bit so we end up freezing half for another time.

No Fail Pie Crust I

Excellent recipe! Tip - do not over mix the dough (any pie crust recipe) or it will be tough. Try this with King Arthur Flour, it increases the flakiness. (I didn't believe flour made a difference till I tried it) You can add 1/2lb of butter to this dough, and roll out dough and cut into 4" squares. Dab a bit of raspberry jam in the center of each square, fold corners up and lightly seal. Sprinkle with sugar and bake at 350 till brown. Delicious raspberry tarts.

Chicken Pot Pie IX

This was flavorful, but a bit dry. Next time I will increase the liquids or add in a cream soup. I used homemade crust instead of store-bought (gag), homemade crust isn't difficult, doesn't take that much time and is so much better tasting.

Beef Pot Roast

Simple, flavorful pot roast. I've made them in the past with added liquid, however I do prefer it without as it seems to intensify the flavor of the roast. This made an excellent gravy with the drippings; I used a bit of water, clear-jel (modified cornstarch which turned out perfect), and a dash or two of sage and pepper. I have 5 year old picky twin boys, and a finicky husband. They about licked their plates clean. :)

Classic Dinner Rolls

Quick and easy dinner rolls! Good flavor and hearty texture; my family loves these rolls. To add variety, I also brush with melted butter before cooking, and then sprinkle chopped rosemary and sea salt on top of about half the pan of rolls. Other good toppings are fine grated Parmesan cheese, poppy seeds, or sesame seeds.

Mom's Chocolate Chip Cookies

My husband found this recipe here and now its the only chocolate chip cookies my family will eat! The pudding makes the cookies tender and moist. I'd say it stops them from getting hard and stale, but they never last long enough even get to that point. LOVE THESE COOKIES! The recipe doubles well too, and I always bring them to get-togethers.

Swedish Meatballs

My family loved these! I added an egg to the mixture based on reviews that some people had problems with the meatballs falling apart. (super lean meat usually needs a little help sticking together, fattier meat will not need the egg) Lots of flavor - loved the poppy seeds on the noodles! Even my 3 year old twins liked them, and they usually don't like anything with a sauce or anything new!

Twice Baked Potatoes

Im just learning to cook, and this recipe was very simple to follow. They turned out great and my guests loved them, they even asked for the recipe! The first batch I made though, the filling ran out all over when in the oven. My second attempt I didnt hollow so much out of the skins and they were perfect!

Roasted Vegetable Chicken

Im just learning to cook and this recipe was very simple and easy to follow. Even better - I had all the ingredients on hand. It is just like mom use to make. I did omit the onions, only because I do not like them. I did stuff onion slices inside - and that turned out great!
