Wonderful Short Ribs

I just made these for the 4th time. Wonderful is right! Everyone that tries them ends up taking the recipe home. I did change a few things. I brown the ribs first, set aside and make the sauce. I use fire roasted tomatoes and 1/2 a cup of beef broth ( red wine works well too). I then stick it all in the oven (covered) rather than on the stove for 2.5-3 hours at 325. Fall apart tender and delicious!

Simple BBQ Ribs

So easy...sooo good! Boiled in broth(seasoned with s&p,cayenne,chili flakes,and a dash of soy) for 45 minutes....Baked covered for 1 hour and uncovered 15 minutes. I have used several types of bbq sauce--Trader Joe's, Sweet Baby Ray's and homemade and they always come out delicious!

Strawberry Jam

Wonderful!!! And so easy. Thickened up right away and tastes great. I made two batches and didn't have enough strawberries for the second batch....I added a cup of blueberries and used white balsamic instead of lemon juice. I think I may use less sugar and just cook a bit longer next time. YUM!

Cinnamon Coffee Cake II

Great!!!! I used french vanilla pudding and substituted the oil for fat free yogurt. I also used egg beaters rather than eggs. So amazingly moist and delicious!

Grandma Johnson's Scones

Great start to a fabulous scone....Obviously very versatile! I was in a rush and really flubbed the directions. I put the sugar in with the flour...oops! I started with a half batch to try it out..... I used half sour cream and half fat free vanilla yogurt, 3/4 cup sugar, tsp of vanilla, cinnamon, whole wheat flour and frozen blueberries. Mixed it all together hoping it would turn out. Pressed it out onto floured parchment; it made 8 good sized scones. Baked 'em for 19 minutes and they came out soooo good! Will definitely try them many different ways!

Brown Sugar Meatloaf

The boys loved it! I used 1/2 cup milk, 1 egg, saute the onion and add a teaspoon of worcestershire to both the meat and sauce. I baked it on a broiler pan as someone suggested; just shaped the meat into a loaf....No grease on the bottom of the loaf! Oh, and I used bread crumbs... the sauce makes this delicious! I really think you could use any meatloaf recipe and just add this sauce.

Zucchini Brownies

I used whole wheat flour, omitted the walnuts and added mini chocolate chips. I replaced half the the oil with fat free yogurt.....They came out moist and delicious. I didn't frost them and they still tasted wonderful!

Pretzel Turtles

I used this recipe as a base to make cranberry cashew caramel (3c's) candy....I used Dove chocolate and they came out perfect. I'm going to try lots of different varieties of add ins as well as using Rolos....

Wonderful Banana Cake

Yummy!!! I've made it twice and it came out great each time. I made it as written, preheating the oven and baking for 40 minutes. The second time, I used devil's food cake mix, 3 bananas and replaced oil/butter with applesauce...Lower fat and delicious!! Of course I then frosted it with a peanut butter frosting from this site...WOW!

Angel Chicken Pasta

The sauce is wonderful and versatile. I used 1 can of mushroom soup, 8 ounces of light cream cheese 1/4 cup wine and 1/4 cup water and I cut the butter in half. I also added sauteed mushrooms and onions. I'll use the sauce with shrimp and vegetables...so good!

Too Much Chocolate Cake

Delicious!!I've made this for two parties and it came out great both times even though I forgot water the first time and the second time I used applesauce and half the oil and lite sour cream. I always use mini chocolate chips. Moist and chocolatey!Thanks for the recipe.

Easy Batter Fruit Cobbler

We have nectarine trees and made so many of these this summer. They were a hit! I doubled the recipe and made in a 9x13 and cooked it for 10 minutes less. Delicious!

Easy Mexican Casserole

Family LOVED this. I didn't put chips in, served them with it. Also tried serving over brown rice...GREAT! I used less salsa and added half a package of taco seasoning! 12/09 update...Made this with leftover rotisserie chicken, with same adjustments as last time....turned out great!!!!

Annie's Fruit Salsa and Cinnamon Chips

This is wonderful!! Always a hit at parties. I use fuji apples. I don't add preserves, but do dip apples in either lime soda or lemon juice to keep the brown away! I usually serve with cinnamon pita chips. YUMMY! 4/29/10 UPDATE--added sweet chili sauce to spice it up. Sooo good!!! I have to bring the recipe to parties to share and make a triple batch.
