Mine came out flat, but still delicious. My mistake was melting the butter. DO NOT melt the butter. It also helped to cool the batter and not overbeat. They are marvelous!!!! Flat or no, still wonderful. Make two batches, because they go quickly. This is a keeper!

Brown Sugar Meatloaf

Absolutely wonderful!!!! Nothing more to say. Some will find it too sweet, I loved the sweet barbequey taste of the meat.

Saltine Toffee Cookies

Ok, I think if you just cook the sugar and butter until it stays together it might have been better. One batch was good, the other was full of sugar on the bottom. Must use real Saltines, not Kroger brand. I have used this recipe various times with various results. Don't know why it isn't the same all the time.

Peanut Butter and Banana Dog Biscuits

Easy to make, I also added some wheat flour but that's usual when making anything rolled. Problem was, I have 4 dogs, and now I have all these biscuits all over the floor since they wouldn't eat them. I don't know...smelled good to me. I tried pieces, whole things, warm, and cold and there they sit...Guess they don't like PB and banana. Where's Elvis' dogs when you need them?

Foolproof Rib Roast

I tried this for Christmas yesterday. It was the first time I ever made a rib roast. I only had a 4 pound roast and followed the entire recipe to a T. The only thing (ONLY THING) was that 145º was a bit too well done for my crowd. It was a wonderful recipe and everyone loved it.

Chicken Jerusalem II

I thought this was excellent. Like just about everyone else, I changed but only one thing-didn't have artichokes so probably the taste was totally different. I used those frozen chicken thighs from Sams, browned them first, then put them into the chicken stock to cook. It was delicious, fast and easy! My kind of meal on a cool fall evening. Comfort food! Thanks.

Shrimp Scampi V

I thought this was pretty good. I have made it several times and it's always a hit at the table. Pair it with a chunk of bread, a salad, and it's a nice quick, delicious meal.

Janet's Rich Banana Bread

Absolutely yummy. I made it twice, first time it almost burned in the loaf pan but the middle was runny. The second time I used a smaller loaf pan and it ran all over the oven, but the stuff still in the loaf pan was delicious. I'm going to buy a different loaf pan. Took it to work and someone begged for it to take home. Wonderful...thank you.
