Easy Pavlova

So glad to find a recipe that doesn't use cream of tartar. I was really worried about attempting this dessert and did learn a few things to remember next time. One, reduce sugar to 3/4 or 1 cup. Two, I was so afraid of over doing it that I under did it. The result? A pavlova that spread to a diameter 50% bigger than I had planned. This thing is HUGE!! Three, this recipe was the highest temp setting I'd seen in comparing recipes and I should have lowered it. At 300 my crust took on a toasted marshmellow color and taste. Not bad, just not a snowy-white pavlova. 275 next time; turning off the oven after 1 hr and opening the door while cooling. Otherwise, I hope this becomes an Easter tradition we always look forward to. Thanks!

Spaghetti Carbonara II

Love it! Saved some of the pasta water in case it turns out dry. Have made this a few times and have sometimes had to add the extra liquid. BUT! I'm also cooking gluten-free pasta, so that may not happen to you!

Lentils and Rice with Fried Onions (Mujadarrah)

I really, really, really wanted to like this. It sounded so good and got pretty good reviews. I used more onion, tried a little more spice. But it's lentils and rice. Quite unappealing in the end, even with all the changes. We went out to eat instead...

Almond Wild Rice

I expected more flavor. Chicken flavored rice again. Even the toasted almonds couldn't elevate this beyond Rice-a-Roni. I will keep this as a starting point. Maybe cranberries instead of raisins, maybe some bulk sausage. Don't know, but I won't give up.

Baked Bar-be-Que Chicken

So reliable! Have made this once a week for many weeks now. Meat is tender, juicy. Oh, by the way, I've been using whole chicken legs as they are a cheap alternative. I've tried different sauces and it's perfect every time. THANK YOU!

Megan's Granola

This is my first try at homemade granola. This recipe is easy and -- from the little tastes I took along the way -- yummy. BUT! There is a fine line between "toasted" and burnt. My granola is burnt. Just watch out. Even an extra minute can kill the whole batch!

Pineapple Upside-Down Cake II

If the cake turned out a disaster, perhaps you made a mistake. Cooking is chemistry and you have to follow directions to a tee. Really cream that butter and sugar, and beat well between additions. The batter fluffs up like a meringe, so don't expect cake-mix consistency. I did do some modifications. (I found the cake a bit DRY) Here's what I recommend: (1) Yes, REDUCE the topping butter to 1/4 cup. Cube it, put it in the pan, and put the pan in the oven while it's preheating. Save the step. Sprinkle with brown sugar and combine with fork. (2)Really pile on that pineapple: be generous in the size of your cubes because they'll shrink!! Don't dry the pineapple, let those juices soak into the batter. (3) Cut the flour 1/4 cup, and reduce baking time by 5-7 minutes. This is a great recipe! So glad I found it. It will become a perineal favorite in this home. Thanks!
