Tofu Cheesecake

This turned out really good. My husband who is a serious cheesecake fan even liked this a lot. I did add in a small amount of dairy free cream cheese. But, not enough to really change the recipe much. Also, for those who are not getting the tofu creamy enough, ensure that you are using Mori Nu Silken Firm Tofu. You will know that you are using the right stuff because it will come out of the box very silky and smooth looking to begin with. The other tofu's are not silky smooth even before blending. This is really a good recipe.

Baked Kale Chips

Apple Crisp II

This is awesome! The family loved it. We made it gluten free with gluten free all purpose flour instead. And I cut the sugar in half because our apples were really ripe. I just wished I had doubled the topping like others said they did. We will be making this again real soon.

Creamy Rice Pudding

This is a great recipe. If you are dairy sensitive like most members of my family do not worry. I made this with vanilla soy milk and it came out creamy and delicious. I added a bit of nutmeg and cinnamon. It had the perfect sweetness and creaminess.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Finding out that my son and I need to be on a gluten free diet I have been searching for recipes that will work for the whole family. I wasn't sure what I was getting into with the garbanzo beans. This cake was good. We liked the chocolate taste yet the texture was just a bit off. I would have liked for it to be just a bit moister. I did use half splenda and half sugar so that we would have a bit less calories. I will definitely be making it again. I will use some of the other suggestions so I can get this where I can say it is absolutely great.

Extreme Banana Nut Bread 'EBNB'

We are a family of banana nut bread lovers. And this recipe was alright. We all felt that something was missing. I think next time I will take the advice of others and add vanilla and cinnamon. But it was a pretty good BNB.

Dutch Babies II

I first made these when I was in an 8th grade cooking class. And believe me this is a wonderful dish. I haven't thought about making these in years. I saw the recipe and it looked like the one I learned so thought about giving it a try. It turned out great and had the same great taste I remember. I went with the powdered sugar. Sometimes we use a little maple syrup or jelly or jam. These are wonderful.

Famous Coconut-Almond Balls

Taste just like the famous brand. I did put the almond on before I dipped it in chocolate. It worked out great. I did have to put them in the freezer before dipping into the chocolate. Also, I let the chocolate cool just a bit. Dipping leaves them perfect with chocolate all around and no little chocolate tails etc. These were perfect.

Conchas (Mexican Sweet Bread)

I grew up on these and they were almost exactly like I remembered. My family loved them. I wanted a recipe that I could make for my mothers visit and I found it. We will definitely be making these again.

Delicious Raspberry Oatmeal Cookie Bars

Bake Sale Lemon Bars

I can't really fault the recipe since I did follow the substitutions listed. I liked the bars but they seemed just a bit too lemony or sour. Also a bit eggy. Other than that I do like them. I don't have any experience with lemon bars so do not know how they should taste. So it could be that I am not partial to lemon bars. I will make these again and put in less lemon juice.

Lasagna Alfredo Roll Ups

My family loved this recipe. I changed the recipe a bit by adding chicken and using part creamy alfredo and part five cheese alfredo. The taste is wonderful and I love that it was so easy and the rolls are easier to serve than regular lasagna. Great recipe, we will definitely be adding this to our rotation.

Meatball Sandwich

This was a great sandwich. Definitely a keeper. I made a few changes, using turkey and using my own bread topped with Italian seasoning and garlic. It was yummy. Even my 13month old baby couldn't stop eating the meatballs.

Chicken Enchiladas II

My family wanted to rate this 4 stars. I would have given it a 3 at the most. It just didn't have anything special. The taste was mediocre at best. I love Mexican food and cook it a lot. I don't think this tasted very authentic at all. There was not much I liked about it. My family actually didn't eat very much of it. I won't make it again.

Basic Pasta

Pasta tastes great and everyone loved it. I couldn't get a nice thin pasta due to hand rolling. With the aid of a pasta machine this would be perfect.

These are awesome! I used butter instead of margarine and added 1/2 teaspoon more of ginger. My family loves ginger snaps and we love this recipe. I will never go back to store bought.

Not so Sloppy Joe Casserole

Real Italian Calzones

Recipe was great. I over kneaded the dough a bit. But all in all my whole family loved them. I did make my own filling using chicken, mushrooms and tomatoes. The dough was great and pretty easy.
