Making pasta without a pasta machine or a rolling pin. Yep, couldn't get it close to being thin enough. Will not do that again...

Tofu Cheesecake
This turned out really good. My husband who is a serious cheesecake fan even liked this a lot. I did add in a small amount of dairy free cream cheese. But, not enough to really change the recipe much. Also, for those who are not getting the tofu creamy enough, ensure that you are using Mori Nu Silken Firm Tofu. You will know that you are using the right stuff because it will come out of the box very silky and smooth looking to begin with. The other tofu's are not silky smooth even before blending. This is really a good recipe.

Baked Kale Chips
I absolutely love these. My very very picky kid loves them too. I crave these things. I use very little salt but they are still delicious.

Apple Crisp II
This is awesome! The family loved it. We made it gluten free with gluten free all purpose flour instead. And I cut the sugar in half because our apples were really ripe. I just wished I had doubled the topping like others said they did. We will be making this again real soon.
