Lime-Cilantro Vinaigrette

I love this recipe, though I cut the oil down to 1/2 cup to make it more weight watchers friendly. It still is 2 points per TBS roughly. It goes well with the milder salad greens, I find. The first salad I put it on was mesclun with arugula and it was a bit much. It was much better on romaine with tomatoes. I bet this would also be good on chicken or as some kind of marinade. I plan to experiment with this. I also find it a great recipe for using up cilantro. I always seem to let bunches go bad. Now I won't ever.

Crisp Marinated Cucumbers

Great recipe. Just like my grandmothers, though I think she cut back on the sugar and increased the vinegar. I made this for a party and everyone said it was just like their grandmothers' too.

Banana Banana Bread

WOW.. I have been searching for this one recipe that was like one in a long lost book and I feel like I have found it. I remember it not having any buttermilk, having a lot of banana, and just being very easy and baking about an hour. This is either THE recipe or darn near close. I followed the recipe to the letter to make sure it was THE ONE and it was moist and so delicious that I think I may have found it!!

Maple Glazed Tofu

Excellent recipe. We just made it for Easter for the vegetarians in the family (i.e. me LOL). We followed some of the other reviewers suggestions like marinating the tofu in soy sauce, adding onions and pineapple tidbits. We also added whole cooked carrots and asparagus to the mix. It was sooooo good. I was worried it would be too sweet also, but I feel the mustard and soy sauce balanced it out. This one is a keeper!

Black Bean and Corn Quesadillas

Excellent, simple quick recipe. Big hit at my house. Can add chicken for the non vegetarians. I've made this 3 times now in the past 2 weeks. Huge success.

Whole Wheat Blueberry Pancakes

These were great. My son had been asking me for chocolate chip pancakes and I saw this recipe as recipe of the day, but I changed it a bit to suit what I had in the house. I substituted 1/4 C of flour with 1/4 C ground flax seed and used 1 TBS of agave nectar instead. I didn't have chocolate chips, so I cut up leftover halloween candy... 5 little nestle crunch bars. My son loved them and didn't even use syrup. I can't wait to try them with blueberries or cinnamon apple. I did need an extra 1/4 cup of milk. Thanks.

Alfredo Sauce

I really enjoyed this recipe. I followed the directions to a T the first time I made it and it came out great. The 2nd time I must not have stirred it right b/c it was a little clumpy but not too bad. It still tasted good. I really like this recipe.

Italian Sausage Soup

I didn't have any zucchini so I used sweet peppers instead...didn't have garlic, so used a bit of garlic salt and omitted the regular salt..didn't have northern beans but cannelini worked nicely. It still was delicious. I used sweet italian sausage. My son LOVED it and he is my barometer for recipes. I will definitely make this again.
