About this Cook
I am a single dad with full custody of my 3 kids. My grandmother taught me to cook when I was 9 - she did not want me to have to get married after college to be able to survive. I cook for our church as well as parties and for most of the kids activities too. Two years ago I built a smoke pit on a double axle trailer so now when I cook I can feed up to 500 in one pass. At home the kids get to pick their meals 3 days a week and the other 4 I get to choose what I am cooking. I have learned that presentation is vital with kids. My youngest boys hate chicken cordon bleu but love chicken with ham and cheese inside it. What is a man to do.
My favorite things to cook
Love cooking smoked meals on my pit but also favor cheese cakes and pies. Most of what I cook has a lot of spice to it. Being from Texas we like meals that make your forehead sweat, eyes water and nose run. However, I do know how to ease back on the heat when need be. I can cook most anything and enjoy time in the kitchen but can also cook on the grill or over a camp fire just as easy.
My favorite family cooking traditions
No real traditions in my family other than my grandmothers concerns. My mom never cooked when we were growing up but now she cooks all the time. What is up with that?
My cooking triumphs
Not sure what I would define as a triumph. I have probably have to say my triumphant momnet would be feeding evacuees from the hurricane last year. Our church fed about 300 people for two weeks using my pit and we had a lot of compliments about the food. Other than that the best thing I can say about my cooking is my kids like it.
My cooking tragedies
I was teaching a cooking class and we were going over cheese cakes. I had made one at the first of the class and everyone was waiting for it to try before class was over. I took it out of the oven and was moving it to a cooling rack when the springform pan popped open and the entire cake crashed to the floor. So much for samples for the class.

Hearty Tuna Casserole
My kids are all Texans and we ended up adding jalapenoes to this to make it more spicy.
