Chicken Stock

Fun to do, never cooked a whole chicken before. Broth was awesome! Made it into Chicken Tortilla Soup. Need to skim the FOG (fat-oil-grease) off during the 3-4 hour simmer...You'll never want canned stock again!

Tortilla Soup I

Great soup, just like in the South. We're transplanted Southerners in the upper midwest and you cannot get awesome soup like this here. Modified a bit: boiled a whole chicken in morning and made my own broth (5# bird, covered with water). See the CHICKEN STOCK recipe here that uses Ginger...awesome. Also added a handful of fresh cilantro during Step 1. Forgot the oregano. Should have used more chicken than what they called for. Used Rotello tomoato/chilis and MEDIUM and that also contributed to its spicyness. Two jalapeno's is a bit spicy! We liked it, but if you are not a spicy fan, might use only 1. Awesome and will be made again!!

Pasta, Broccoli and Chicken

Added some onion which I sauteed with pesto/chiken. Used ALOT more broccoli as my fam likes it. USed one can of italian seasoned diced tomatoes (undrained, 14.5 oz). Doubled the pesto and used about 12 oz of pre-cooked Tyson chicken. Also marinated onion/garlic/pesto mixture in a dash of white wine. VERY GOOD. Entire family liked it. Highly recommend.

Not bad. Only used 1# of meat (family not big meat eaters), added roughly 2 CUPS celery, and it was pretty good.

Daddy's 'If They'da had This at the Alamo we would'ha WON!' Texas Chili

Substituted ground beef (80%) and less poundage per serving. Think I used like 2-1/2 lbs on a scaled to 10 servings. Also didn't use jalapenos's (kids don't like hot) nor masa harina flour. Still came out pretty good and going to make it again tonight!

Italian Spaghetti Sauce with Meatballs

Very good. I am an experienced tomato sauce chef, and modified it a bit. (1) used one 28 oz can of crushed and one 28 oz of diced. (2) browned meatballs in skillet (along with italian sausage links) PRIOR to saute the onion. (3) only cooked it for about an hour, not the length they said and it turned out fine. We really liked and will save this and do it again!

Salisbury Steak

Very good. Followed recipe exactly except doubled the gravy AND added ONE packet of dry onion soup. Maybe just a bit of onion overload, but nobody complained. Younger kids really liked, as did I. May cut use only 1/2 packet of dry soup next time. Also, did NOT add any salt anywhere and still was good. I love salty food and onions.
