Mexican Lasagna
I used tortillas in place of lasagna noodles. Easier to stack, making this a quick dinner. Mexican oregano is a great spice for this - also a great opportunity to use up some leftover charred BBQ corn... Didn't use water - the salsa is plenty liquid. Add some green chilies for extra heat.

Cauliflower Soup
love it as a lunch staple and it gets rid of fridge leftovers (throw in carrots, peppers, onions, whatever!). I don't precook any of the veggies, just put in a pot on low, or slow cooker. I have a hand blender that I use when veggies are soft, blend right in the pot for a few seconds - leaving it somewhat chunky. A cup of milk helps to thicken a bit. Have tried with small cut ham steaks as well, very tasty.

Butternut Squash and Turnip Soup
Yummy! Would strongly recommend -even if you don't like turnip or squash!! (I am not fond of turnip). I didnt measure the veggies - I was given a big squash and a few turnips from a neighbours garden (used 1/2 of the large squash, whole small turnip). Also used fresh from the garden spanish and sweet red onion. Omitted the honey, but did use all the spices. Also threw in a bit of chili powder, and red chili peppers. Pureed with sour cream once all veggies were softened. Amazing! Cooked in a crock pot for ease, then pureed with hand blender.
