very nice and easy to make for an evening snack. just baked these with no great modifications except 1 tspn vanilla and a few drops of strawberry essence. used frozen strawberries which i thawed, squezed to remove excess water and them little with my hands since my kids dont like whole pieces.a very tasty muffin for sure .

One Bowl Chocolate Cake III

Reviewed: Feb. 5, 2009
i followed the recipe word by word but the center didnt cook at all.though i baked all the batter in a springform pan. tastes very good with a great chocolatey taste but the center was very gooey ,didnt cook at all even after 45 min.it rose well. the top was hard.so i had to cut the cake leaving the center.iam giving this 4 stars since the the kids loved it and the cake didnt get wasted. i will still try this for its chocolatey taste next time and post my views again.

Chocolate Oil Cake

Reviewed: Apr. 24, 2008
i made this cake today .i mixed the cocoa powder in water and added.this prevents lumps and the cocoa mixes well into the flour. i halved the amount exactly. soon after baking there was a hard crust on top which made me think i ve choosen the wrong recipe. but by the evening/next day it turned out amazingly moist and soft.nobody believed its without eggs and butter.i didnt have white vinegar so added apple cider vinegar and the rest followed the recipe exactly.definitely a great, easy cake .thanks for sharing the recipe.

Red Velvet Cake I

Reviewed: Feb. 2, 2008
i made this cake for a ladies party. the cake i did following the reviews from other members by adding 1 cup oil,2 cups sugar,4 tbspn cocoa. i didnt use vinegar. after baking it for 30 min the cake was done but dry with a big crack on top.i used a cake leveler to level the top.i baked the cake in a single big round pan instead of 2, 8 inch pans.the icing was definitely the best. i added pink and yellow colours to it and iced the cake. i also added 1/2 can of mixed berry pie filling between the layers and sprinkled some sugar.it was a hit with my friends and after seeing this cake i have recieved 2 orders for making birthday cakes.the taste of the cake improved with the icing and pie filing.

Fresh Coconut Cake

Reviewed: Mar. 22, 2006
i havent tried this recipe yet.but wanted to share some info about using fresh coconut which is used widely in most of the asian cuisines.simple way to break open a fresh coconut which we use back home is to simply dip the whole coconut in a bucket of water for 5 min.then hit it on some hard object to crack it a bit.once cracked keep a strainer to filter and catch the coconut water.once 2 get 2 halves keep it in the fridge for few hrs ( this makes the coconut to loosen from the shell).then with a knife cut chunks of the flesh and put in the food processor .this gives a nice flaky coconut .hope this is useful and do write about how this method worked for u all.thanks

A-Number-1 Banana Cake

Reviewed: Mar. 19, 2006
this is such a wonderful cake.soft and moist.I reduced the baking soda to 3/4tbspn and instead of buttermilk added soy milk.cup cakes baked faster and 9*13 took 45 min to bake.i had only 2 overripe bananas which along the given quantity sugar was perfect.not too sweet but perfect.this cake has become a staple at our home when there are over ripe bananas. i ve taken a print out of this recipe and kept it on my fridge. one of the best!!! thanks for sharing this.
