Roasted Beets and Sauteed Beet Greens

This is the first year I grew beets in my garden. I was first introduced to home grown beets by my mother -in-law. This recipe is a double blessing. Both dishes were a hit with my husband and my toddler. My son loves how the beets turn his and our tongues purple!

Authentic Mexican Tortillas

This recipe is great for its versatility. I've tried both oil and shortening and have ended up with satisfying tortillas. I have also used corn meal and wheat flour as partial substitutions. I hate buying tortillas now.

BBQ Steak

I blended the ingredients in a blender and it came out great! I poured it over our steak and let it sit for a day. Then my husband grilled it and the steak was excellent.

Green Tomato Mincemeat

What a great recipe! I had an abundance of green tomatoes and didn't want to fry all of them or let them go to waste. I love mincemeat pie and will love giving jars of mincemeat for Christmas. I scaled it back to 40 servings, and used all of the ingredients called for. I sampled it before I canned and am anxious to make a pie come Thanksgiving or Christmas. It may need a little thickening before putting in a pie as filling.

Cherry Pie III

This pie is delicious. I like cinnamon, so I added cinnamon to taste. I also increased the recipe and made several batches for canning. I plan to give them as presents for Christmas. The filling seperated a little in the jars, but I just stirred it before I put into a crust.

Ranch Dressing II

I used this recipe as a place to start. I used yogurt instead of sour cream and put in dill and Italian spices. My friend has raved about it ever since. This will become a staple in our household.

Pumpkin Chili

Juicy Steak

I had never thought of broiling steak, much less cooking it from a frozen state. I was raised to only BBQ steak. This is a great recipe if you can't grill all year round. It is a hit with my family.

Chicken Florentine Rice Casserole

This recipe was a hit. I don't understand those who said this dish did not have enough flavor. They must have used old spices. I too used chicken broth instead of bullion. I also added a tsp of salt and some rosemary. Instead of Parmesan, I used Monteray Jack cheese. This will definitely be served again in our home.

Maple Dill Carrots

This recipe makes carrots one of my favorite vegetables to eat. I used to only like "burned" carrots. My 3 year-old son also likes them this way. He ate every carrot on his plate. Thank you.

Baked Spaghetti Squash Lasagna Style

I love this recipe. It gives Spaghetti Sqaush a whole new twist. I love serving it in the squash rind. I used my own lasagna recipe and just substituted squash for the noodles. Thanks for the great idea!

This recipe was great! I don't like using store bought sauces with MSG. This sauce tastes great and all the ingredients are usually on hand. My husband said that this is a recipe I need to keep handy.

Strawberry Rhubarb Coffee Cake

I halved this recipe and then added a cup of milk instead of 1/2 cup. I also used fresh rhubarb from my garden. It wasn't enough, so I used more strawberries to make up the difference. I used 1/3rd whole wheat flour and 2/3rds white. It turned out light and fluffy and sweet and tangy. My 4-yr-old. said "This is the yummiest cake I've ever had." It will be come a spring favorite.

Cheddar Waldorf Salad

This salad gave me some good ideas. I added craisins and my tastebuds said "Wow!" I love the cheddar taste with apples and the craisins just add a little extra tang.
