Spinach and Leek White Bean Soup

I really liked this soup. It is full of good stuff that is good for you. Unfortunately my little one's pallate still needs stretching. He had to be cajoled into finishing his bowl. I will make this again and I hope my children's tastes mature.

Easy and Fun Peanut Butter Balls

This recipe was great! I made them with my 5yr old. We have allergies to milk, so we used a milk free powder and they turned out great! They will be a real treat for us!

Penne with Red Pepper Sauce and Broccoli

This was delicious. I had to substitute some ingredients as I was cooking with what was on hand. I only had one red pepper and used white cheddar instead of parmesan. I also used gnocchi instead of penne. I will have to try this one again with the prescribed ingredients.

Garlicky Beet Delight

This was delicious! My husband and I are beet fans and really liked this recipe. I plan to make this recipe for a BBQ this weekend. It is a great recipe to introduce people to beets.

Cheddar Waldorf Salad

This salad gave me some good ideas. I added craisins and my tastebuds said "Wow!" I love the cheddar taste with apples and the craisins just add a little extra tang.

Strawberry Rhubarb Coffee Cake

I halved this recipe and then added a cup of milk instead of 1/2 cup. I also used fresh rhubarb from my garden. It wasn't enough, so I used more strawberries to make up the difference. I used 1/3rd whole wheat flour and 2/3rds white. It turned out light and fluffy and sweet and tangy. My 4-yr-old. said "This is the yummiest cake I've ever had." It will be come a spring favorite.

Sweet and Sour Pork III

This recipe was great! I don't like using store bought sauces with MSG. This sauce tastes great and all the ingredients are usually on hand. My husband said that this is a recipe I need to keep handy.

This is a good simple recipe. If you want a more striking taste, you can add more spice, different veggies, a topping, etc. to make it more exciting. Both my son and husband had seconds.

Baked Spaghetti Squash Lasagna Style

I love this recipe. It gives Spaghetti Sqaush a whole new twist. I love serving it in the squash rind. I used my own lasagna recipe and just substituted squash for the noodles. Thanks for the great idea!

Maple Dill Carrots

This recipe makes carrots one of my favorite vegetables to eat. I used to only like "burned" carrots. My 3 year-old son also likes them this way. He ate every carrot on his plate. Thank you.

Chicken Florentine Rice Casserole

This recipe was a hit. I don't understand those who said this dish did not have enough flavor. They must have used old spices. I too used chicken broth instead of bullion. I also added a tsp of salt and some rosemary. Instead of Parmesan, I used Monteray Jack cheese. This will definitely be served again in our home.

Juicy Steak

I had never thought of broiling steak, much less cooking it from a frozen state. I was raised to only BBQ steak. This is a great recipe if you can't grill all year round. It is a hit with my family.

Ranch Dressing II

Cherry Pie III

This pie is delicious. I like cinnamon, so I added cinnamon to taste. I also increased the recipe and made several batches for canning. I plan to give them as presents for Christmas. The filling seperated a little in the jars, but I just stirred it before I put into a crust.

Green Tomato Mincemeat

What a great recipe! I had an abundance of green tomatoes and didn't want to fry all of them or let them go to waste. I love mincemeat pie and will love giving jars of mincemeat for Christmas. I scaled it back to 40 servings, and used all of the ingredients called for. I sampled it before I canned and am anxious to make a pie come Thanksgiving or Christmas. It may need a little thickening before putting in a pie as filling.

BBQ Steak

I blended the ingredients in a blender and it came out great! I poured it over our steak and let it sit for a day. Then my husband grilled it and the steak was excellent.
