Baked Asparagus with Balsamic Butter Sauce

Vegetable Frittata

This is a great recipe! I've made it several times for brunches. I've found that it tastes better if you cook it ahead of time and let it sit. This allows for the flavors to meld. I use whatever veggies I have on hand and O'Brien potatoes which have onions and green and red peppers already mixed in. It is delicious!

Garlic Carrots

Great recipe! Of course I tweaked it for my family, but it was a hit. I followed the carrot part, but added some Aidel's chicken & apple sausages and served with seasoned rice. Even my picky eaters liked it.

Curried Zucchini Soup

Best Peanut Sauce

I like this recipe because it provides a great jumping off point. You can add a little of this and a little of that to suit your tastebuds. Me, I like ginger and coconut milk. Have fun with it.

Tasty Lemonade

A good recipe. Every lemonade needs to be adjusted to a person's taste preference. I think the brown sugar adds good flavor. I like the slight hint of molasses.

Rice and Lentil Casserole

I made a vegetarian version of this recipe which was a hit with my family and will become one of our regular meals. Instead of water, I used vegetable stock. I also added 1 tsp salt, 1/2 tsp garlic powder, and 1 tsp Italina sesaonings. Sometimes I add spinach, mushrooms, or other veggies on hand. I've taken it as a side dish and have even made it for mom's with newborns. Thank you for the inspiration.

Swiss Chard with Pinto Beans and Goat Cheese

This was delicious. I had some left over home made pinto beans, so I used those. I forgot the lime, but it still tasted great. I also used sharp white cheddar because I didn't have goat cheese. Great recipe!
