Awesome and Easy Creamy Corn Casserole

Very good flavor, and extremely easy. The only changes I made were to use only half the butter, and I added a small can of chopped chiles. Got great reviews - this recipe is definitely going to be a regular in my rotation. Delicious!

Wild Rice Turkey Dish

We enjoyed this casserole very much. It was very easy and tasty, and the leftovers are good, too. The water chestnuts give it a nice crunch. The only change I made was to double the bread crumbs, and add 1/4 cup shredded cheddar to the crumbs before topping the casserole. Thanks for the post, I'll be making it again.

Eggplant Parmesan II

This was very good! My first experience with cooking eggplant. The only thing I did differently was to bake the slices longer, probably 10-12 min. per side, before building in the casserole dish. They just need to be tender. But I loved it, and I know I will make it again. Thanks for the recipe!

Pork Medallions with Balsamic Vinegar and Capers

This was very good. The only things I changed were to add a teaspoon of sugar and 2 tablespoons of white wine to the sauce, since I was afraid the vinegar would be too overpowering. But it really wasn't, and the meat was very tender. I'll be making this again.

Spicy Garlic Lime Chicken

This was very tasty. I had 6 chicken breasts, and doubled the spice mixture, and I felt like I could have used a little more of the spice mixture. I also doubled the sauce ingredients, and it worked out very well. I served it with the Quinoa and Black Beans recipe from this website, and some steamed veggies, and it was a delicious meal. So healthy and good. Thanks for posting!

Quinoa and Black Beans

This was very good! I followed the recipe pretty closely, but I only used one can of black beans. And I used chicken broth since that's what I had. I didn't have frozen corn, so I used a can of the Summer Crisp corn - it added just the right sweet note to the dish. My husband even had seconds, and said how much he liked it. It was our first experience with quinoa, and I'm so glad it was good!

Chicken Tortilla Soup V

This was good. I did adjust a little: added more cumin and chili powder, used the juice of one lime instead of lemon juice, added one can of black beans, and thickened it a little with cornstarch and water, then stirred in about 1/2 c. shredded cheddar cheese. It was pretty quick to make, and had very good flavor. I will be making this one again!

Basic Corn Muffins

These were really good corn muffins, but I did follow a couple of other readers' suggestions: I added 1/4 cup of sour cream, 1/4 teaspoon vanilla, 1 tablespoon brown sugar, and 1/2 cup shredded cheddar cheese. Thanks to arlynlovesrecipes for the ideas! They turned out sweet, like I wanted, and quite moist. I'm very happy with this recipe.

Marbled Pumpkin Cheesecake

Delicious cheesecake. I made a graham cracker crust, but added sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon ginger to the crust. And the only changes I made to the filling were to add 1/2 teaspoon ginger, and 1/4 teaspoon cloves with the cinnamon. And I topped it with a sour cream glaze (sour cream with sugar and 1 teaspoon vanilla, spread on top of the hot cheesecake and baked for another 10 minutes). The leftovers are in the refrigerator, and they're calling me right now! Mmmm. Very good.

Marinated Pork Tenderloin

Very good flavor. I did love the marinade, and I made extra and thickened it with cornstarch and water, but the texture was really strange. I'm not sure why. But it tasted so good, I'll definitely be making this again.

Classy Chicken

The flavor was very good, and I liked this method for cooking the chicken. I didn't overcook the zucchini. Couldn't get the sauce to be smooth, so it looked strange, although it tasted very good. I'll have to try it again and work on the sauce.

Lime Chicken Soft Tacos

This was delicious! I stayed pretty close to the recipe as given, except I used more lime juice (the juice of two small limes.) And I used probably 3 teaspoons of sugar. Next time I'll make more sauce, since it was so flavorful, and I was wishing I had more. But the flavor was really good. Thank you!

Baked Ziti IV

Very good recipe. I made it last night and got some great responses. I did add an egg to the cottage cheese/sour cream mixture, and added a little grated parmesan. I also used all ground beef, no sausage. Next time I'll use a little more sauce. But other than that, it was good, and pretty easy - I'll definitely make it again.
