Caramel Frosting VII

I did the same thing as the reviewer below, and ended up with the same hardened, candy-like mess in my mixing bowl that I had to soak for hours to remove. (Perhaps you're supposed to use a hand-held, and beat it in the pan in which it was boiled??) But I made a second batch, and only boiled it for 3 or 4 minutes (and didn't beat it), and it turned out fine - poured it directly from the pan onto the cake and didn't have a problem. It is delicious, so I had to give it three stars :-)

Nany's White Cake

Super easy, super delicious! I must admit, I was a little concerned by so many who'd said this didn't rise properly, but I didn't have that problem at all. I made this cake yesteray for my husband for Valentine's Day. Followed the recipe exactly, except I used my heart-shaped layer cake pans (that are supposed to be the same volume as 8" round). I did do one thing which could have aided better rising - I used my Kitchen Aid mixer, and whipped it for several seconds both after adding the eggs, and then again after all ingredients were added. It rose perfectly, made a deliciously moist white cake. (I wonder if those for whom it didn't rise were using either expired baking powder or a margarine product instead of butter?) I wanted a very old-fashioned result, so I used a simple cooked brown sugar icing, and sprinkled some candy hearts around the perimiter of the plate to add "Valentiney-ness" - the result was exactly what I wanted, and my husband (and I) loved it! Butterscotch Pudding I

I made this exactly according to the recipe - holy COW this stuff is good! I can't believe so much flavor comes out of such simple ingredients! Mine did come out with a few lumps, will try combining the cornstarch with the cold milk before adding, and will also try making it with a whisk.

Broccoli Casserole

I made this to take to Easter dinner at a friend's. I'd been working like crazy, so I used what I had in the house so I didn't have to go shopping. I used fresh broccoli instead of the frozen; shredded colby jack cheese instead of the cheddar, eliminated the canned soup and threw in some sour cream. Plus I forgot the eggs altogether! But it came out sooooo yummy! There was hardly any left to take home!

Marinara Dipping Sauce

Excellent simple, fresh sauce! I needed a bit more than the recipe made, so I used about 10 plum tomatoes, and chopped about 15-20 leaves of fresh basil. Also, I avoid sugar like the plague, so I add a pinch of ground cloves to counteract the acidity of the tomatoes, a trick told to me by my Italian neighbor. Made a really yummy marinara!

Caroline and Brian's Stuffed Mushrooms

VERY yummy! I made mine using the large portabello caps. Used 3 links of mild Italian turkey sausage, browned in pan, and 5 cloves of garlic put through the garlic press. Also substituted fresh ground chipotle pepper for the cayenne, and used panko bread crumbs. Served it as a main dish with a salad and some fresh bread - awesome meal!

Ezekiel Bread I

A good, hearty, nutritious bread, all ingredients available at the Whole Foods across the street from my house - but WAY too sweet for my liking. Next time I'll experiment with cutting the honey back to maybe 1/4 cup, and cutting the salt back so hopefully it'll still rise properly.

Uncle Dank's Gumbo

This stuff is so fabulously amazingly AWESOME!! My husband won't eat shrimp, so I have to hide seafood in it - I chop up a tuna steak the same size as the diced chicken, he doesn't even know it's in there. One absolute must - you MUST use real andouille, which outside of New Orleans isn't easy to find. I order it online, so it makes this a pretty pricey dish to prepare - but totally worth it!
