Fried Rice Restaurant Style

Bland, Bland, Bland! Must add onion, both white and green, garlic, celery, ginger, and bean sprouts if you have them. I like the sesame oil, but a little goes a long way. And why "baby carrot"? Do you mean real baby carrot or those little scrubbed carrots in the bag? I will definitely not be using this recipe again. How on earth has it rated 4.5 stars?

Joseph's Best Easy Bacon Recipe

I always bake my bacon starting in a cold oven. I heard it helps render more of the fat out. I should like excessive use of aluminum foil in this recipe, since my retirement is strongly tied to this commodity, but it is really not needed. Clean up is easy without it. I used to use a rack but quit because it was a pain to clean. I did not see a significant change in the final product.

Smooth Sweet Tea

Be careful, too heavy a pinch of baking soda tastes salty. I wou1ld make this again and again but I have another procedure that works for me: Fill my 2 qt pitcher almost full with water from the hot tap (our hot water is softened) plus 1 or 2 large tea bags (Tetley or Luzianne). Heat this on high in the microwave for 10 minutes and let sit until cool enough to handle. Remove tea bags, add a big scoop of turbinado sugar (probably 3/4 cup). Chill and serve over ice. I add other flavor teas occasionally (orange spice, chai, mint, ...). We had some issues with our kitchen sink that required turning off the cold water for a few days. This is when I discovered that softened water makes a smother tea with no clouding or bitterness.

Overnight Eggnog French Toast

This is not French Toast, it is Bread Pudding. It is pretty good bread pudding. And it is very good for breakfast. I left out corn syrup, it just doesn't need it.

Cheddar Biscuits

I made a half batch using sour milk which gave me a lovely light biscuit. Substituted butter for margarine and garlic powder and season salt instead of garlic salt. No parsley in the house, but didn't miss it. This is a very good recipe.

Baked Potato

you can use almost any temperature and adjust the time. I bake potatoes nearly any time I bake something other than cookies. Since I bake my chicken at 400 I often bake the potatoes at 400. it usually takes about an hour, depending on the size of the 'tater.

Cornbread Muffins I

I loved this recipe. I won't talk about my changes, they were few and driven my need. The flavor was very sweet, but that's what I expected. I did make in a round cake pan instead of muffins. I will certainly make this again.

Best Ever Slow Cooker Italian Beef Roast

I have not made this particular recipe but have had similar and loved it. I have not been able to make it, though. Does anyone know what size crock pot I should be using? Mine comes out very dry and stringy. Should I be using a smaller slow cooker? I also have a problem with the photo. Not a slow cooked piece of beef and not the chuck cut. Does look delicious.......

Cottage Cheese Bread I

i was going to ask what i did wrong, but then i took another look at the photo, and mine looks much like this. the top sank after rising nicely. the texture was crumbly and oily. it needed more salt. this is not one i'll be trying again.

the only thing i changed was using butter instead of shortening. it came out very dense and oddly dry and oily at the same time. it was the perfect amount of batter for a large loaf pan

Best Bread Pudding with Vanilla Sauce

i just made the sauce. the flavor was good, but the egg curdled. probably my fault, but i didn't like it enough to try again. on the up side, it was not as sweet as some other sauces i've tried.

Bread Pudding with Whiskey Sauce III

this was an excellent recipe even though I couldn't follow it exactly. I needed to use up some stale hamburger buns for the bread and I had no cream. I used all whole milk instead and dotted the top with a little butter. the proportion of eggs, dairy, and bread was perfect, moist but not soggy. yummy. and i used spiced rum instead of whiskey. definitely a keeper.

Golden Sweet Cornbread

I just made these (as mini muffins 8 minutes) and they are yummy. I did think it was odd that some found them too sweet. I thought they could use a little more sugar. Then i realized i had left it out altogether. Still yummy and great texture. I'll try to get them right next time. Soon, i hope.

All-Around Spice Rub

This is very spicy! I chose to first cut the paprika by 1/3 (still too spicy) and double the brown sugar. Still pretty hot which is usually not a problem for me. The next time i used the rubbI added some cinnamon which added some depth to the flavor. I think it still needs something, cumin maybe. I may like it more on chicken rather than ribs. Not a keeper for me, but you might like it if you want HOT.

Lemon Iced Tea

I find this a bit too bitter. I prefer a bit off the boil water and 10-15 min steep. I also like it strong so i use 3 jumbo bags, at least, per 1/2 gallon of water.

Pear Scones

I also would not call these scones. They are too light and soft to be scones. Mine did spread a lot probably because my pears were very moist. The flavor is sublime. Very delicate spicing let the pear flavor shine. I will certainly make them again, at least until I use up all these very ripe pears. I'm going to try a little more flour in the next batch.

Real Chicken Stock

i also add sage and sometimes thyme. i save vegetable peals and trimmings instead of using "good" veggies. onion skin adds nice color to the stock.
