Paleo Taco Salad

Such a great recipe on its own... I give a 5 star rating, but like most recipes, I tweak it for my taste. One thing I love to do on taco salad night is add finely diced red peppers in with the meat. I cook half in at the start then the other half of red pepper near the end for a more crunchy pep. On the bed of romaine I toss in diced cucumber. While dairy isn't considered paleo, I still consume it... I mean, c'mon, it's sour cream.... I can bathe in it!! And cheese... I'd be a cheesy crybaby without it!

Classic Irish Boiled Dinner

I've grown up eating boiled dinner, even drank the broth in a cup along side my dinner! Of all Irish meals, this is the tastiest!! A way to free up room in the pot is a pressure cooker. I usually cook two cottage rolls under pressure for a half hour. If its not cooked through using my meat thermometer I cook it for another 20 minutes. Then I remove the hams, put them in a pot with a fair amount of juice and keep them in a warm oven. Then into the pressure cooker goes the potatoes, carrots and turnip. Ohhh, take out some juice to add to the cabbage that will boil in another pot. Just fill the cabbage pot 2/3 up then add water. Now back to the pressure cooker, add more water depending on how much veg you have and cook under pressure for approx. 12-15 mins!!! I need boiled dinner now!!

Cedar Planked Salmon

I hate fish unless it's breaded and from a box. I made this as part of surf and turf with our friends next-door fully intending to eat just the steak. Not only did I eat this I loved it. If I could give it 10 stars I would. Than you for sharing this recipe!

Kansas City Style Pork Back Ribs

We just committed the 3rd deadly sin, GLUTTONY! WOW, these ribs are sooo good. My husband, a confirmed rib hater, loved them. I did mine in a roaster in the oven at 325 for a couple of hours, lid off for the last hour, an additional 15-20 mins with the sauce and they turned out just perfectly!
