Best Tuna Melt (New Jersey Diner Style)

My husband said this is the best tuna melt he has EVER had. And I don't know anyone who likes tuna melts as much as him, so I was impressed! The best advice in the recipe was to broil the bread both sides and then take out and top with tuna, cheese, tomatoes, etc. In the past we've always had problems with the bottom of the bread being too soft. So thank you for that hint! Also, I love the idea of layering cheese, tomatoes, cheese. It tasted so good (even though the tomato made it a bit juicy to eat - it was worth it) Now, the only addition I have to your recipe is to put a little bit of fresh chopped garlic in--it enhances the flavor to perfection!

Texas Chicken Quesadillas

Excellent recipe! It was so unique tasting! I added garlic and green peppers to the onions. Before I baked it I put fresh cilantro and diced tomatoes on top of the cooked onion mixture. It really added some extra flavor!!

Chicken Tortilla Soup III

WOW! We loved this soup!! My husband and I ate leftovers for two days! It even tasted better re-heated. I followed the recipe almost exactly but did make a few additions. I added green pepper to the onion/garlic mixture (and I nearly doubled the garlic because it cooks down so much!) I used Pace Picante salsa instead of fresh salsa, reduced sodium cream of chicken soup, and butter instead of margarine (because I don't like margarine). I also added fresh diced tomatoes to the finished product and WA-LA! A PERFECT tortilla soup!

Beer Margaritas

I will definitely NOT be able to go back to regular margaritas! I'm a huge fan of carbonation so it tantalized my taste buds, but not my husband's. After awhile the drink grew on him though...especially after enough Tequila! I used Diet 7-up instead of water and also added just a little bit of Rose's Sweetened Lime Juice to the finished product to sweeten it up a little. But you know the most surprising fact of it all is that I could not take the beer! The beer added a smoothness to the drink and I just used Busch Light. In fact, I increased the amount of beer to make it even more smooth and still didn't taste it!

Aussie Chicken

I really liked this recipe. My husband just thought it was ok because his chicken was overdone. I used low fat mayo and you couldn't even tell the difference.I served it over brown rice, and the rice soaked up all the extra mustard sauce--which tasted excellent.

Garlic Ranch Chicken

When I went to marinate the chicken I realized I only had a little bit of Ranch dressing left so I added mayo, milk and olive oil to the marinade. I doubled the garlic and let it marinate overnight. The chicken was juicy, and full of flavor (especially garlic!)I grilled it and served it with brown rice and broccoli for a healthy meal!

Ethiopian Spiced Cottage Cheese with Greens (Gomen Kitfo)

I had cottage cheese by chance and I wanted to spice it up a bit, but this was not the best way to do it. I didn't like it personally, I thought the clove taste was a little overwhelming. However, I really enjoyed making something new and stepping outside the box by tasting culturally different foods.
