Quick Zucchini Chips

Most of the time, recipes here are pretty good. This recipe sucks. Look at the charred and burned photos of attempts...this is what you will get if you follow the recipe. The original photo we all saw on Facebook suspiciously looks to me like it was fried in a deep fryer, not baked, and certainly not the golden color we were suckered into believing we could achieve by following the recipe. I think Facebook is conducting some kind of social media experiment.

Baked Dijon Salmon

Fantastic! When the weather gets cold, I don't like going outside to grill, and I was looking for a different way to prepare salmon. This recipe was not only easy to make, but very tasty. I added just a touch more Dijon mustard because I like Dijon mustard, otherwise, I followed the recipe directions to the letter, except instead of brushing each salmon filet "lightly", I brushed each filet "generously". I served the salmon with a mixed green salad and it was a hit. My wife loved it. I don't understand people who "hate" this recipe, they must be difficult to please. Perhaps they can hire a personal chef to make their salmon to please their palate. Sheesh.

Bolivian Saltenas

My father was born in Bolivia, and his family ran a salteneria in La Paz when he was a teenager. I wanted to make my own saltenas, so I was happy to find this recipe. I was disapointed about how dry they came out, even following the directions to the letter. I'm wondering if I should not have drained the "excess grease" as the recipe calls for, and maybe left it in so it would make a sauce of some kind.

Balsamic Baked Tilapia

Super tasty and easy. I used a couple of tilapia filets from Costco. I sauted the onions and peppers, and added a clove of crushed, fresh garlic for just a minute before adding the balsamic vinegar. I also topped with feta cheese instead of blue cheese. There wasn't much sauce once I pulled the dish out of the oven, so I drizzled a little olive oil and balsamic vinegar on the greens before topping with the tilapia filets. Big hit! Will make again.
