Mexican Chicken Soup

with a couple of minor changes this is my favorite soup. I didn't use the taco seasoning powder, but added 1/2 can mild Rotel, and added no celery. We also just eat ours without the avocado and cheese. It's really good stuff!

Classic Cuban Midnight (Medianoche) Sandwich

Excellent! I used the ingredients as listed, but just mixed mustard and mayo together and used the spread. I also used my George Foreman grill to cook it and the bread turned out nice and crusty outside and soft inside. I wouldn't change anything.

Wilted Lettuce Salad

My Grandma used to make this and I had forgotten how good it is. I will make this again and again. She used a little more Vinegar so hers had a little more pop. LOVE THIS!

Wow this is just like we eat in puerto rico at abuela's house. I did add some fresh cilantro in place of recaio. Otherwise, follow this recipe to a T.

Mexican Wedding Cakes II

Loved these! I used 1 cup mini chocolate morsels and 1 cup finely chopped pecans instead of the walnuts, but otherwise I kept to the recipe. They were perfect!! I really put forth some self control not to eat too many.
