Raspberry Almond Muffins
I tried the recipe as is and it was excellent. I did not think that they were to buttery as others suggested. They were not sweet at all. I think that the sugar was just right. Although if you do like a sweet muffin, add another 1/4 cup of sugar or more berries. They did not last 5 mins out of the oven. This batch made 12 small cupcakes so I would recommend doubling and freezing any leftovers. They will warm up just fine in the microwave or toaster oven.

Pasta Fagioli II
excellent. I did make some changes though. I added half the garlic to begin with and leave it in there. I added 2 small carrots shredded, 2 celery stalks chopped small, 2 cans chunky tomato sauce with italian seasoning and 2 cans white beans. I double the spices and add only 2 cups of water. I don't ever add the pasta directly to the soup. I add it to each bowl as I am ready to serve because pasta will continue to cook in the soup and you will have mush. If you have left overs, they freeze well - without the pasta.

Ginger Veggie Stir-Fry
I made this exactly as it is except I added more veggies. I added snap peas, boc choy, celery, portabello mushroom and greenbeans but I thought that the sauce was flavorless. I would probably add more garlic and more low sodium soy sauce, I would eliminate the cornstarch and I would possible throw in a splash of hoisin or maybe terriaki or just add some fresh finely chopped parsley - something to add some flavor.
