I was skeptical but this was perfect! I wanted to report what I did for others who like me may be using a much smaller roast. Our eye of round was 1 lb. 3 oz. I preheated oven @500 for 20 minutes. Lowered temp to 475 and put it in oven to roast for 8 minutes. I turned off the oven and let it sit another 30 min. but it was too rare so I turned oven back on to 325 and roasted for 30 min. It came out perfectly seared and pink throughout. I might keep it at 475 for 9 min. on a roast this small next time cutting down on the sitting time after oven is off.
