High Temperature Eye-of-Round Roast
I was skeptical but this was perfect! I wanted to report what I did for others who like me may be using a much smaller roast. Our eye of round was 1 lb. 3 oz. I preheated oven @500 for 20 minutes. Lowered temp to 475 and put it in oven to roast for 8 minutes. I turned off the oven and let it sit another 30 min. but it was too rare so I turned oven back on to 325 and roasted for 30 min. It came out perfectly seared and pink throughout. I might keep it at 475 for 9 min. on a roast this small next time cutting down on the sitting time after oven is off.

Carrot Rice
The method for making this dish is flawed. I had to add some water to the onion/spice mixture to get them to blend. A little chicken broth would work too. I don't know why they say to "pulverize" the peanuts. It would be better with small crunchy bits of finely chopped peanuts since the peanut meal overwhelms the other flavors. If I hadn't used a generous portion of cayenne I would not have liked the dish at all.

Potato Bread I
This is a horrible recipe. It did not turn out at all and I am an experienced bread maker. The ingredients did not mix thoroughly (I have an excellent bread machine). It seems there is not enough liquid. I removed dough from the machine and tried to hand knead it but it still turned out horrible. Total waste of ingredients and time.
