Fluffy Pancakes

These pancakes are soooo good. I have never made them from scratch because I always thought that they were too much bother, but these were really easy and the taste beats anything in a box!!! So worth it.

Mini Cheesecakes I

These are great. I have made them with Oreo cookies on the bottom and crushed oreos or mini chocolate chips in the batter. I have used a whole Oreo or one split in half with the frosting side up. The key is not too bake too long or they will not be as moist. I am going to try making mini pumpkin cheese cakes for Thanksgiving. The size is great, just big enough and portable for guests at parties.

Popcorn Salad

I read all the other 5^ reviews but I guess I just don't get it. It is such an odd comination but I thought I would try it anyway. I wish I would have put all those ingredients on cooked pasta instead. I feel like I wasted alot of bacon etc for nothing.

Chicago-Style Pan Pizza

Really good. I did prebake the crust for 10 min at 400. Then I lowere the temp to 350. I don't think it would have cook through with so many toppings on it. I also used fresh chopped tomatoes instead of sauce. It was great and every one loved it.

Chicken Tortilla Soup V

I think this recipe is great. The only thing I would add is a diced avocado. It makes it just as good as any you get at a restaurant. Quick and easy, no big mess and great soup.

Pizza On The Grill I

This recipe was great. I used pizza dough from the grocery store. I have made the same crust in the oven but it never tasted this good!! My grill must be very hot because I had to really watch the crust. I had all the ingredients ready to go so that I could put them on quickly. I partially precooked some veggies (onion zucchinni pepper broccoli etc) in the microvave because I did not think they would cook on the grill as the dough browns very fast. I put olive oil on a pizza pan and stretched out the dough so that is was an even thickness. I put olive oil on both sides. I preheated the grill and carefully put the dough on the grill. You have to watch it as it burns quickly but leave it on this side as long as you can, it helps cook the inside of the crust, The crust gets cripsy and is easy to flip over. Quickly put on the toppings. I used chopped fresh tomatoes seasoned with garlic salt, basil, soft mozarella and grated cheese. It waa the BEST!!! I used the precooked veggies to make a second veggie pizza. I did have to turn the grill down to low and put the lid on to the melt the cheese. The crust had some dark spots but it added to the flavor, just like brick oven. It was cripy on the out side, chewy on the inside. I will never cook a pizza in the oven again!!!

Chimichurri Sauce

I had chimichurri steak at a restaurant recently and loved it. This sauce was just as good. Not too sour, just perfect. I will defintely make it again.

Saltine Toffee Cookies

I have been making this recipe for years but I always line the pan with foil. When the cookies cool, just peel the foil off and crack cookies into pieces. I just started using the new release foil. I usually have to make the recipe several times at the holidays because they are a family favorite. Store in a moisture proof container, can get soft and sticky in humid weather.
