Oat-Bran Chocolate Chip Cookies

These are really good! I made half a batch, and subbed the egg with 1/2 a mashed banana and 1/4 tsp baking powder, and 2tsp soy milk. I also reduced the sugar slightly. The cooking time was perfect, and at least it's a way to get lots of fiber into my family :)

Stuffed Butternut Squash

I've made this a few times now, and we really like it. It's pretty easy (just takes some time to cook the squash). I use soy sauce instead of tamari. Next time, I will cube the squash instead of stuffing it- seems that it might be easier to eat that way.

Veggie Pot Pie

I've made this many times, and it is definitely a family favorite. I replace the celery and cauliflower with frozen mixed peas, carrots, and corn (personal preference). I also use frozen green beans. So so yummy! When I ask my boyfriend what he wants for dinner, he almost always requests this!

T's Sweet Potato Fries

My whole family really likes these. I cut some white potatoes, and season and cook them together. After being microwaved, the sweet potatoes take the same amount of time to cook as the white potatoes.

Val and Jess's Vegan Avocado Dip

This is really really good. I omitted the onion and cilantro, because I don't care for either. I also used a smaller amount of chili powder, so my 3yo can eat it. Even my boyfriend, who rarely likes beans, thinks it's really good!

Easy Eggplant Parmesan

This is really good. I've made it a few times, and it went over well each time. Pretty easy to make, too. One thing though- the recipe doesn't say, but if you put cheese on and bake without covering, the cheese comes out really brown. That's the only change I'd make- either add cheese then cover and bake, or bake uncovered and add the final layer of cheese just for the last couple minutes. I did the latter, and it worked well.

Chipotle Sauce

This is really good!! I only used the sauce from the peppers (no peppers) and its still a bit hot for my taste but it is a wonderful flavor!! I also only used about half of the mayo, because I don't like it. This might sound silly, but I used baby cereal to thicken it- and it worked well. lol I will definitely make this again and again!!!

Pam's Glazed Meatloaf

This was really good! My boyfriend and I both liked it a lot. I did make 2 changes- I only had one egg, and I used tomato juice instead of the milk. It still came out good. I think next time, I'll keep the tomato juice, and use less salt. I liked the glaze a lot too- I don't like supersweet glaze, and this one had just the right amount of sweetness. Very yummy- this will be a "usual" in our home :) Thanks
