My Zydeco Stomp Gumbo recipe on this site was the start of my first creative fusion of great food. I have many more creations to share with folks that are looking to share love VIA great food and a happy environment revolving around great party food.
My cooking tragedies
Mistaking powdered sugar for flour 1 time when trying to make roux. My wife laughed and laughed after I through out 2 batches of crystalized burned candy before realizing what the heck was going on. After I chunked the pot out in the yard I went to "cool off" and she helped me realize what the problem was :)

Boudreaux's Zydeco Stomp Gumbo
Glad you all like the recipe. Been a few years since I worked on this one. Try adding some oysters and lump crab meat. You will love it. The recipe is only soupy until you add it with rice. Shred a Cooked Chicken instead of using Raw for better texture. Also, I add roasted & peeled Poblano peppers now and I also use a bock beer for depth of flavor. Won Gumbo Cookoff May 2012 with this recipe!!!!
