Old-Fashioned Chocolate Fudge

This is wonderful!! This is only the second time I've tried to make "real" fudge (with out choc. chips) This first time turned into a rock collection. It's been a few years since then. I decided to try again. I read a lot of the reviews and tips on how to make fudge. I don't have a candy thermometer so I used the glass of water method. I ended up cooking it for twenty five minutes total. I checked it ever five because I wasn't sure how long it would take to make it there. I do have a gas range so that helps with the reducing to simmer. I let it sit for 10 minutes after it reached the soft boil stage to cool off some. Then I added the vanilla and butter. I stirred it for 30 minutes until I thought it was losing it's sheen. It set up pretty nice maybe just a tad soft but not to soft to pick up. NO crystalizing and wonderfully smooth!! My 14 month old son keeps begging for more tastes! Imagine that! :) Thanks this is wonderful. I will make for Christmas and New Years!! Tip: use a wet pastry brush around the edges of the sauce pan to make sure no sugar crystals get in. This is much easier than a paper towel.

Peanut Butter Bars I

Living in Korea we can't get Reese's very easy. These were WONDERFUL!!! I didn't have chocolate chips but had white chocolate chips...mmmmmm sooooo good! Thanks for helping us get our Reese's fix! :) I ended up using 1 1/2 bags of chips and used mini muffin papers. Put a little of the white chocolate on the bottom a flattened ball next then more white chocolate to make it more like an actually Reese. I had a lot of peanut butter mixture left over so then I put it in a 8x8 pan and melted a couple Hershey candy bars for the top (added peanut butter to chocolate like recipe says). I liked the white chocolate better. The actually bars were a little too sweet much more peanut butter mixture than the "Reese" style. Thank you so much!!

Fast Fruit Cocktail Cake

"That stuffs good!" said my husband. I did do a little different. I did 1/2 c brown and 1/2 c white sugar and added 1 t vanilla. I had to cook it for 1 hour. It was very soupy after 30 minutes. Even being cooked for 1 hour it is VERY moist and gooey.

Mayonnaise Biscuits

GREAT!!! I just found out my daughter has a milk allergy and wanted a recipe with out butter or shortening. I used soy milk and these came out great. My husband said he couldn't even tell the difference. I used bread flour with 2 tsp baking soda and 1 1/2 tsp salt. Then added soy milk until just workable. Rolled out and baked at 375 F baked on Pampered Chef stone for 15 min. Lightly browned and wonderful!

No Cook Icing

Wonderful! I used mint with the vanilla. I used 1 tsp mint but it was way too much. Next time I'll just use 1/4 tsp. I plan to use it for a Chocolate cake. I used my kitchen aid with the wire whisk. I also used two egg whites because I have small farm eggs. I added everything but the water mixed for a minute full speed then poured in the water and returned to full speed for 10-15 minutes. Turned out really creamy and fluffy. Thanks!

Cake Mixes from Scratch and Variations

This was great!! I live in South Korea and can not get shortening so I used the substitute of oil. It worked great! I also have a slightly bigger pan than a 9 x 13 so I upped the servings to 36. The cake rose wonderfully and tasted delicious. I added cinnamon plus from pampered chef. It gave it a nice light spiced taste. Next time I will only bake it 30 minutes. It got slightly over done on the bottom and edges. Thanks so much!! Feb 08: I just made this cake again tonight. I have just found out my daughter is allergic to milk and always looking at ways to make things with out milk. Well, I used the basic cake recipe, left out the eggs and milk and added Sprite for the liquid. It turned out wonderful! Again I used oil and not shortening. Wonderful!

Crispy and Creamy Doughnuts

These were wonderful!! My husand and I made them for our church one Sunday morning. It took a total of 4 hours to get a double batch done. Word to the Wise if you do a double batch do each batch of dough seperately. It's hard to get that much dough mixed up at one time. While the first is raising you can do the second. We used a glass and an apple corer (center) to cut them. made them perfect size. We have been asked to bring them again next week. I think we'll make them on Sat instead of Sunday morning this time! :) We did add a Tsp of Maple to the glaze instead of vanilla. Wonderful. I think we will try adding a couple T of cocoa next week for some Chocolate ones! Thank you so much!

Creamy Hot Cocoa

Grocery Store Frosting

WONDERFUL!!! This is so light and fluffy. I used my Kitchen Aid stand mixer which made it easy to beat the full 15 min. What a difference!! My husband was craving coconut so I added a 1/2 c. cocnut and it turned out wonderful. I did add a little less vanilla (I used Mexican vanilla which is strong.)and added just a little more water after adding the coconut. Thanks! This is a wonderful frosting!!

Simple Whole Roasted Chicken

This was wonderful!! I didn't have nutmeg or cloves so I doubled the cinnamon and allspice. My husband and 3 year old daughter loved it. They ate most of it before I had a change to get some!! Thanks!!

Classic Thanksgiving Dressing With Parsley, Sage and Thyme

This was Wonderful!! I did add twice as much liquid (at least maybe more). We live in South Korea but had an American Thanksgiving Day service. Another American that is married to a Korean only ate this Dressing out of everything that was there.
