Good, nice and spicy! But I agree with another reviewer who said they felt like it was missing something. Definitely salt, maybe a tad more lemon juice and cumin?

Couscous with Mushrooms and Sun-Dried Tomatoes

I loved this recipe! I wasn't sure about the "1 bunch" of green onions, so I just used 4 whole green onions. Also, I used already-moistened (but not marinated) sun-dried tomatoes, so I cooked my couscous in vegetable stock. *yum yum* :-) (I don't know what the other review meant about not having enough liquid for the vegetables, but nothing extra was needed for me. Cook over medium heat.)

Barley Salad With Almonds And Apricots

A very tasty dish! Though the lemon was a little strong, so maybe doubling the spices would be could, as the other reviews suggested, or just cutting down on the juice a little. My lemon was quite large though, maybe that was it. All in all it was very good! More parsley would definitely be good.

Mmmmm soooo good. You have to like garlic though, cause it's a pretty strong flavor. I added just a smidge of Parmesan cheese, but I'm sure they'd be good without it as well!

Beaker's Vegetable Barley Soup

Tasty and DELICIOUS! :-D I loved this recipe--the blend of spices was perfect and it was very easy to make. However, I do agree that it was almost a stew because it was so thick (I personally like it this way!) so if you want more of a soup, add more broth or water. Thanks for the recipe!

Strawberry Cake from Scratch

Tasty... but very strange texture. It may've been my fault, I don't think I used enough flour. Make sure to garnish with sliced strawberries and stick some in between the layers as well!

Cranberry Pumpkin Bread

I substituted the applesauce for the oil and used dried cranberries instead of canned cranberry sauce because I had them. I wouldn't suggest doing the latter. I think it cut a little down on the sweetness. Overall it's a tasty bread; I think it'd be even better if I'd used the sauce. Also, the walnuts don't stay on the top very well when you try and cut the bread, so I'd suggest either punshing them down before baking or simply mixing them in the batter.

Greek Chicken Pasta

Excellent, with a few changes.... I added an 8 oz can of pasta sauce, just cause I felt like a more saucey pasta. I through in mushrooms for fun and I used reduced-fat feta. The sauce was absolutely delicious! However, I would recommend only using 12 oz of pasta--there were waaaay too many noodles and I think it overpowered the sauce a bit. Plus, it seemed to serve at least 8, haha. But, all in all it was very tasty!

Mmmm. Delicious, just the way it is! Full of flavor! Though I used almonds instead of pine nuts to cut down on cost--but they really add a nice touch to this pasta!

I subsituted 2 tablespoons red wine vinegar for the olive oil and used fat-free feta. It came out absolutely delicious with so much less fat!

Greek Feta And Olive Spread

Absolutely delicious! I used fat-free feta and it was marvelous! I read these reviews beforehand and took the advice to mix in the sun-dried tomatoes with the olives and it came out very pretty! Great dip for veggies or pitas and a huge hit with my friends!
