Microwave Mochi

Reviewed: Jan. 15, 2013
Loved this...here's what we did: cut the sugar to 1/2 c, swapped the vinegar with canola oil, and added a couple of drops of vanilla. Also cut the cook time to 6minutes. For the topping, used cornstarch instead of potato starch, and agree w/another reviewer that using the salt was awesome!

Big Soft Ginger Cookies

Reviewed: Oct. 16, 2012
Nice, soft and gingerbready! Actually thought I should use a cookie cutter to make gingerbread men instead of little round cookies! Not that they would roll out and cut that easily, just based on holiday taste. Did as previous users suggested and refrigerated before rolling into tiny balls and flattening.

Caramelized Butternut Squash Soup

Reviewed: Sep. 29, 2012
The interesting thing about this soup was that the taste kept changing so significantly across every step. Was very very pleasantly surprised with the flavor after adding the cream. And, indeed, add the bacon because it makes the soup!!

Garlic Chicken Sausage and Summer Vegetable Saute

Reviewed: Sep. 24, 2012
What an amazing dish!! Love how the flavors mix up so intensely. I used cooking spray instead of garlic oil, and grilled the sausage links to brown them up nicely before slicing as the recipe dictates. Added that to the onions that were already started and a few minutes later, added cubed tofu as a substitute for the mushrooms. I grilled the zucchini as well and served to the side of the dish. So fantastic, and flavorful...I have a happy family tonight!

Layered Chicken and Black Bean Enchilada Casserole

Reviewed: Sep. 21, 2012
The dish turned out so fantastic...definitely the best enchilada casserole I have ever had. Mixed the sour cream in with the beans and diced chiles...and also toasted the tortillas in the oven. Both suggestions came from other cooks - thank you!!! Rave reviews by my little dinner party. Oh, and also loved the avocado on top for a few minutes in the oven...really added to the authenticity of the dish :)

Basil Chicken Ravioli Carbonara

Reviewed: Sep. 17, 2012
I really liked the sauce that this recipe makes...I thought it was a fantastic base. I did not add ravioli into the sauce...had run out of ravioli, so I simmered the sauce separately, and when done, served it over linguine. Slight changes: I added pieces of bacon into the sauce and melted tons of freshly grated parmesan cheese into it as well. It was amazing -- very restaurant quality.

No-Bake Cheesy Skillet Lasagna

Reviewed: Sep. 11, 2012
I agree w/previous ratings that this recipe is more of a hamburger helper sort of quick meal than a skillet lasagna. I'd expect lasagna to have a little more texture/cheesiness vice sauciness. I cut down the cheese sauce to 1.5c, and it was still a little saucy. Also added one whole diced tomato, as I can't imagine lasagna w/o a tomato taste like marinara!! My son wolfed it down...he liked it and I may try it on his friends as well. :)

Easy Weeknight Chicken Parmesan

Reviewed: Sep. 8, 2012
This was such a great meal...Loved how tender the chicken turned out, and it was even white meat! I changed up the breading method a little...first I dipped into milk, then flour, then egg, then the panko (learned this from tonkatsu)...turned out beautiful. Also, I used breast tenderloins instead of full breasts. Didn't have to alter the sauce at all...yum!

Cheese-Stuffed Giant Meatballs

Reviewed: Sep. 7, 2012
Actually thought this was pretty darn good. I doubled the recipe so I could freeze some of the meatloaf, and instead of muffin tins I did two things: made 3 mini loaves of meatloaf to freeze, and made some sliders for my son and me to eat tonight. I loved the flavor that the roasted tomato cooking sauce gave the meatloaf. I have always used ketchup when mixing meatloaf, so I was really pleased to see this variation. I used white onion vice green onion. And, both with the mini meat loaves and the sliders, I put string cheese in the middle - fantastic surprise! Lastly, I added some additional seasoning to the mix, and instead of mixing the panko crumbs and sauce separately, I just mixed it all together in the same mixing bowl. Pretty awesome!!

Indian Crepes

Reviewed: Aug. 10, 2012
Pretty savory crepes...I liked how well they cooked on my little crepe maker. Added fennel instead of caraway since they come from the same family but fennel is a little sweeter. Mixed all in a blender...wonderful.
