Spanish Chicken and Rice from Birds Eye®

Reviewed: Jul. 21, 2013
Super quick and easy dish! Loved it...used it as an additional entre to our Mexican dinner night and paired it with tamales. The chicken was very well seasoned, and the rice was perfect. It's hard to make a Spanish chicken and rice dish well, and I think this more than hit the mark. Loved the use of the frozen sofrito...it was made w/fresh ingredients and I usually by the canned stuff. This was SO MUCH BETTER. Great job, Birds Eye, and thank you!!!

HERDEZ® Roasted Corn Tamales with Chipotle Shrimp

Reviewed: Jul. 21, 2013
Really loved this recipe -- the tamales took about 1.5hrs to cook, a bit longer than called for, but that could definitely be due to how I steamed them. I also added the shrimp INTO the tamales...right on top of the corn and the masa. So fantastic cooked into it like that. Unfortunately, didn't have more sauce to cover them with after I took them out of the husks, but that's OK because I added sour cream and guacamole...the shrimp could totally stand on its own, btw, was such a great use of the Chipotle cooking sauce. Great Recipe! A keeper for sure.

Lemon Lovers Luscious Cheesecake Pie

Reviewed: Mar. 10, 2013
We really enjoyed this recipe -- my daughter and I made this together. We used a springform pan, and it worked just fine, although we had to cook longer than 35min. We also made our own homemade lemon curd. It was time-consuming, but really worth a Sunday afternoon together. Thanks so much!

Delicious Ham and Potato Soup

Reviewed: Mar. 10, 2013
Both my kids LOVED this soup, and I have to admit -- was definitely very very delicious. I thought the roux may have made the soup taste a little bit too flour-y, but I'm a soup aficionado, so that could just be my own taste because the kids didn't feel that way at all! So good, and definitely a keeper. Thank you!!

Bowties with Italian Sausage in a Cream Basil Sauce

Reviewed: Mar. 10, 2013
The recipe was pretty amazing -- I used dried basil instead of fresh, and the sauce still came out brilliant. My daughter thought that it could be a little creamier, but my son advised that it was perfect the way it was. Either way, the taste was phenomenal, so powerful and flavorful. 5 stars ++++.

Healthier Creamy Rice Pudding

Reviewed: Feb. 17, 2013
I love rice pudding so was excited to try this with brown rice. The rice pudding tasted much better after it cooled for about an hour. I had to add another cup of water during the first 45min. Will probably be making this again!!

Black Bean Tacos

Reviewed: Feb. 10, 2013
Very much enjoyed the seasonings with this! Was intrigued by the black beans, but my family is not vegetarian and wanted meat...soooo...I added hamburger to the mix, and it turned out great!! :) Oh, also, kept the salsa out and served on the side.

Grands!® Easy Taco Melts

Reviewed: Feb. 3, 2013
Pretty good!! Made this for a bunch of teenage boys and they scarfed them down. Used loads of cheese, and changed up the filling a little bit...made more of an empanada type filling instead of only salsa, but definitely served with salsa!!!

Microwave Mochi

Reviewed: Jan. 15, 2013
Loved this...here's what we did: cut the sugar to 1/2 c, swapped the vinegar with canola oil, and added a couple of drops of vanilla. Also cut the cook time to 6minutes. For the topping, used cornstarch instead of potato starch, and agree w/another reviewer that using the salt was awesome!

Big Soft Ginger Cookies

Reviewed: Oct. 16, 2012
Nice, soft and gingerbready! Actually thought I should use a cookie cutter to make gingerbread men instead of little round cookies! Not that they would roll out and cut that easily, just based on holiday taste. Did as previous users suggested and refrigerated before rolling into tiny balls and flattening.
