Veronica's Hot Spinach, Artichoke and Chile Dip

I made this for football Sunday & everyone loved it! I didn't have chiles or jalapenos, so I substituted a small jar of diced pimentos (drained). I threw it in my mini crock pot and let it cook on high for a couple hours & then turned it down to low. Everyone loved it! We ate it with pita chips & tortilla scoop chips.

Egg in a Boat

We call this "Egg in a Nest" & my kids love it! My big-eater puts two of them together with a slice of cheese in the middle. We use whole wheat bread.

Eggplant Croquettes

This has become a favorite in our house! I've made it several different ways ~ the original recipe with cheddar, with mozzarella & parm. served with pasta & sauce ~ and our favorite way, with spinach & feta.

Ultimate Hoagie Dip

Yummy! I followed the recipe almost exactly. I left out the oregano & sprinkled a bit of onion powder in. I also mixed the chopped tomatoes (I used a few firm, tiny plumb tomatoes that were easy to dice.) & the lettuce right in. I served it with sliced Italian bread. Next time I will add some finely diced purple onion. Thanks for the recipe! It's a great alternative to cheese & cracker for football Sundays!

Pasta with Peas and Sausage

This is a favorite at our house! I typically use evaporated milk instead of heavy cream. I also use a few cloves of garlic. pressed & a whole 5oz container of shredded Parmesan. If I have links & don’t feel like removing the casings, I cook them & then slice them up.

Cheese Fondue

Wonderful! I wanted a classic fondue & this is it! I did add a tablespoon of corn starch to each of the cheeses, as I ground them in the food processor. I added a tiny amount of lemon juice as it was cooking and used Wondra, instead of regular flour.
