These were delicious and pretty easy to make. The most time-consuming part was actually filling all the tart shells. I used gorgonzola cheese instead of regular blue and I omitted the light cream, using goat cheese instead to add a little creaminess. I also added some caramelized onion for a little sweetness, which was really good. It works well to mix up the filling ahead of time and refrigerate until you are ready to fill the tart shells. There is lots of room for customization in this recipe.

Curry-Chutney Cheese Mold

This is delicious and easy to make. I omitted the bacon because I'm just not crazy about it. And I omitted the coconut because I didn't have any on hand. I also substituted Craisins for raisins, which was delicious. Personally, I prefer this dip without the chutney on top (but I love curry).

Holiday Left-Over Sweet Potato Cake

This is DELICIOUS. I had an entire crock pot full of leftover sweet potato casserole after Thanksgiving and I used it all to make several loaves of this cake. The only change I made to the recipe was to cut the sugar by about 1/3 because there was already a lot of sugar in the leftover casserole I used. This recipe is fantastic and freezes beautifully. It gets devoured every time I take it to work.

Angela's Awesome Enchiladas

I often roast a whole chicken in the slow cooker for dinner and make these enchiladas with the leftover chicken meat. Just throw the leftover meat in the slow cooker with a can of tomato sauce, a container of salsa and some chicken stock. Season to taste (I use cumin, chili powder, garlic powder, and a little salt). Cook on low 2-4 hours and then assemble enchiladas. Thanks for the great recipe!!

Raspberry Sour Cream Pie

I make these all the time and they are so good! Admittedly, they are kind of a lot of work but well worth it! Beware: plan to give some away because otherwise you will eat them all! So delicious!

Divine Spaghetti Sauce

Just like the spaghetti sauce my mom makes. The only changes I made were to use diced canned tomatoes instead of whole and I added olive oil to the sauce (quite a bit). Delicious!

Awesome Slow Cooker Pot Roast

This recipe is fantastic! It is so easy and everybody raved. I added onion, carrot, and potatoes to mine (beneath the roast) and it all turned out well. Thank you for a recipe I can't wait to make again!

Buttery Herb Wine Sauce

This is an awesome recipe. It's super easy and quick. I have also made it without the egg and it's good that way, too. I add chicken to the sauce while sauteeing the mushrooms and it's always delicious!
