Creamy Ranch Pork Chops and Rice

This made pork chops GOOD food again! I can't give 5 stars since I adjusted... I fried 4 strips of bacon first, retained the bacon on the side and dumped out all bu 1 Tbsp of the drippings. Fried the chops in THAT instead of plain vegetable oil. I also added 1 Tbsp of minced garlic and used only 1/8 cup of milk, then substituted regular ranch dressing instead of the packet. This was a HUGE hit at my house and goes in the permanent file.

Dirty Rice

I don't care what you name it, it's awesome. I used saffron instead of annatto, and some dried cilantro instead of fresh, as well as brown instead of white rice... but this is a wonderful recipe and needs NO improvement as far as I am concerned. Wonderful!

Filipino Lumpia

Wonderful recipe! I did adjust a thing or two, to my personal preference, not to fix a problem, just because I liked it a certain way. I'm vegan so I used tofu "mock pork" and wrappers that I knew were vegan friendly. I also substituted bok choy for the green cabbage, green onions for the regular onion, and I shredded the carrots. Other than that, MARVELOUS recipe!

Roasted Garlic Scalloped Potatoes

Ahhhh SUPERB! I didn't bother peeling the potatoes, just sliced them with my mandolin. I also couldn't find the 19 oz roasted garlic potatoe soup so I went with a homemade cream of potatoe (can't use cow's milk) that I added some garlic to. The cream I replaced with soy milk, and the cheddar with cashew "cheese" (vegan), and had NO regrets! My fussy youngest even said "HEY! This IS good!"

Easy Vegetarian Stroganoff

I'd have loved to have given this a better rating but there was a lot of work involved in making this a true vegetarian meal... I am vegan and went a step beyond that as well but that has nothing to do with the rating. The cream of mushroom soup is a no go for vegetarian so I had to make homemade soup first. At that point there is so much in this recipe that was not called out, that it was no longer THIS recipe. It was a good start though and what I came up with as a result is a keeper. Thank you!

Butternut and Acorn Squash Soup

I can't give this 5 stars because I changed a crucial thing or two, and I don't know how it tastes with the original ingredients, but I give it 4 because it was an AWESOME place to start! I'm vegan so dairy was out of the question. Instead I made a "cream" out of raw cashews and water, with about 1/2 tsp lemon juice, and used that in in it's place. The end result was a thick, hearty, and rich bisque that everyone raves about. Two thumbs up.

Vegetarian Cabbage Rolls

It was a good start but I can't give it 5 stars since I made more than one change.I didn't use tomatoe soup, I used two cans of stewed tomatoes. I used a large can of diced tomatoes rather than the whole peeled. I also cut out the egg (I'm vegan), the peas (seemed wrong), the onion or garlic powder (we're already using onions and garlic in the recipe., and substituted chili powder for the cayenne, and cumin for the red pepper sauce. Gave it a pleasant southwestern flavour. This was a lot of work but it made a a generous amount which I froze a great deal of in meal size portions so I would say it was worth it.

Tomato Spinach and Basil Soup

I made this soup, in a vegan version, by substituting vegan friendly ingredients, and I am utterly addicted. This freezes well too so I have weeks wirth of hot creamy soup available. Thank you!

Addictive Sweet Potato Burritos

Yowza!!! A #1 hit in my house and the ONLY thing I altered was to use a vegan substitute for cheddar cheese. ADDICTIVE is right! And they freeze so well! THANK you for putting THIS where I can find it!

California Grilled Veggie Sandwich

Oh.My.WORD!! This was simply amazing! I didn't "change" the basic format of the recipe as in the blend of flavours, but I did convert it to vegan. It was out of this world! Using only vegan friendly substitutes I had the best meal I've had all week! THANK you!

This was unexpectedly great! It has depth of flavour and the vegetables come out PERFECT while the beans maintain their integrity. I ate this SEVERAL times during the week and not ONCE was I tempted to throw it out because I was sick of it!

Vegetarian Chili

The best chili I have EVER had! I topped it with cashew "cheese", Tofutti's "Better than Sour Cream", and a splash of TACO sauce... I ate until I reached the "omgimgonnaexplode" state. It's even SUPERB as a leftover and stands freezing VERY nicely.

Connie's Zucchini "Crab" Cakes

I have nothing but great to say about these. As I fried them, I kept the finished ones hot in the oven and ohhhhh they were the best use of zucchini I have found in a LONG time! I made a "dip" of tofu mayo and horseradish for these... a dollop atop each and what a SWEET supper I had!

Pizza Dough II

At LAST!!! A pizza dough recipe that doesn't end up with "white bread" results! Beautiful dough! The ONLY draw back was this... if you don't LOVE making pizza FREQUENTLY, don't let your kids try this... you'll get nagged ENDLESSLY for "more of that PIZZA soon Mom!!"
