Apple Oatmeal Crisp

Awesome! Very sweet. I used Spenda in place of the white sugar. I'm wondering if it was too dry for others because they cut the apples too large? Mine was perfect and I cut the apples in 1/4" slices.

Chicken Marsala

This was very good. One thing I want to point out--DO NOT USE SWEET MARSALA WINE. It was way too sweet. I made that mistake, and fortunately had time for a do-over.

Sirloin Steak Dianne

We eat all dinners from a microwave, due to shift work. BF "LOVED LOVED LOVED" it. We did not have steak sauce, so I omitted that. I covered the beef while it was in the pan the second time. Came out VERY tender.

Gluten-Free Fudge Brownies

I used a 7x11 pan, and it also was too small. Definitely use a 13x9 pan and cook a little less. Also, I accidentally bought Hershey's Special Dark cocoa powder. What a hit. EVERYONE loved it, even those not needing the gluten-free. It was gone in one afternoon.

Cheesy Polenta

FABULOUS! Very creamy and smooth--just like our favorite restaurant. I used chicken stock instead of water and added a slice of hot pepper cheese and we couldn't stop eating it. If you are looking for a hard "patty" type polenta, this is not it. I believe you need to wait for it to cool for it to be that consistency.

Baked Fresh Cherry Pie

Excellent. Due to allergies, changed almond extract to vanilla, and added 1 tsp. brandy. Used 3/4 c. brown sugar; 1/2 c. white. Not too sweet. Get a cherry pitter!

Rachel's Tomato Basil Soup

I'm not a tomato soup fan (I think it's just warm catsup), but this was very good and easy to make. I added 1 tsp. salt, 1/2 tsp. white pepper and 1 Tbl. brown sugar. Then made a second batch.

Connie's Zucchini "Crab" Cakes

I wouldn't say it tastes like crab, but if you think of them as zucchini patties, they are pretty darn good! I was a little weary of adding 2 tsp. Old Bay due to the fact that I cut out salt due to high blood pressure, but very pleased that I added the 2 tsp. I also used panko breading, but think next time I'll try the Italian bread crumbs. Will be sharing this recipe!

Sweet and Sour Ham Steak

My boyfriend loved, LOVED it! I really liked it. I followed the recipe exactly. Note--to make pumpkin pie spice if you don't have any, mix 1 Tbl. cinnamon; 1 Tbl. ground ginger; 1 1/2 tsp. nutmeg; 1 1/2 tsp. allspice.

Easy Chicken Rice Casserole

I wanted to save time, so I precooked the rice and chicken pieces. I did not cut back on the milk, and I used Campbell's Southwest Soup for some kick. It turned out pretty good!
