These muffins were moist and delicious! I did glance over some of the reviews and tweaked the recipe. Rather than using 1 cup of white sugar, I used 1/2 cup of white sugar and 1/2 cup of light brown sugar. I also added 1 teaspoon of cinnamon to the batter. When I went to make the muffins, I realized I only had a cup of butter left and I love crumb toppings so I ended up using just 7 tablespoons of butter. As for the apples, I used 2 gala apples, chopping most of it into small squares and some of it into smaller shreds. I ended up with 12 medium-sized muffins and had I had more butter at hand, I would've increased the streusel topping recipe so that I could add some in the middle of the muffins. The only disappointment I have is that the tops did not rise very much but this recipe is definitely a keeper (my dad tried one and commented that they were pretty good and he normally isn't one for baked goods...in fact, he had one for breakfast the next day and took TWO to work with him)! Next time, I might try substituting all or some of the butter with applesauce for a healthier version. And might I add that aroma that fills the kitchen as these bake is WONDERFUL - an awesome bonus!
