Ground Beef Zucchini Skillet

This was tasty and super easy to make. I used garlic powder instead of fresh garlic to save time and it was great. Even when I cook with fresh garlic I usually add some garlic powder because it gives a different flavor and enhances most recipes. I think next time I will top this meal off with shredded mozzarella while it's still piping hot. I used grated parmesan as suggested which was fine too. I used a bit more zucchini as well as yellow squash because I love veggies. I think this entire meal took 20 minutes to make from start to finish plus it's very healthy. I used lean ground beef and drained off the fat. I will be making this again. I would give this 4 1/2 stars if I could.

Fried Rice with Cilantro

Light, easy and delicious. I used more cilantro than this recipe calls whch was definitely needed. I used fresh jalapeno peppers instead if chili peppers because that's all I had. I omitted the fish sauce because I didn't have any. It was still excellent. I will make this over and over again.

Honey Ginger Shrimp

Spicy Bean Salsa

Absolutely the best bean salsa I have ever had. I did add plenty of finely chopped fresh cilantro and fresh lime juice. I followed the recipe closely except for using fresh tomatoes and jalapenos instead of canned. I added minced fresh garlic too as well as garlic powder. I used half the Italian dressing as suggested but did use an aged balsamic dressing which had a rich flavor. I chopped the ingredients in the food processor doing each one seperately to get the right size pieces. The garlic was finely minced with the salad dressing. This enables the pieces to all get minced up without having to stop and scoop the sides of the processor over and over again. The flavors that pop in your mouth are incredible with this dish. I served it with the Shrimp Durango recipe on this site and it was an incredible meal.

Shrimp Durango

This dish was light and delicious with a slight kick and very easy to make. I followed the recipe exactly except I used more cilantro and a bit more lime juice. The lime was a bit too strong which was my fault. Next time I will add the extra cilantro but keep the lime as the recipe calls for. I served this with the 5 star bean salsa recipe I got from here (which I added lime and cilantro to) and it made a sensational meal.

Tasty and easy to prepare. Personally I would use much less curry next time or leave it out all together. I'm not a huge fan of curry but I still enjoyed this dish.

Baked Apricot Chicken

Super easy and very tasty. We made this with boneless thighs and served with wild rice to soak up the sauce. I made a little more sauce than the recipe called for. The kids liked it too which is a big plus.

Shrimp Dijonnaise

Delicious and super easy to make. I followed the recipe exactly except I used Earth Balance instead of butter. I will probably add more mustard and a tiny bit more lemon juice next time just to give it a little stronger flavor. It was perfectly good as is though. I served it over whole wheat pasta for a delicious nutritious meal. I think next time I will add some fresh zucchini and yellow squash to the shrimp before I put it into the oven. This would compliment the flavors nicely. It will need more sauce to cover the veggies of course. I will be making this again.

Filet Mignon with Rich Balsamic Glaze

Wow! Awesome, quick, delicious recipe!!! I added a little garlic powder to the meat and topped with some minced fresh garlic. Just a reminder though, watch your cooking time. I know someone mentioned theirs was dry. You need to check your meats while they're cooking since there are so many variables that can cause your meal to cook faster or slower each time. I may cook up some shallots and bacon and add to the sauce next time like the tenderloin and shallots recipe here. I love that recipe but this one is ten times faster and almost as good (a very close second.) I will be making this one again and again.

Spinach Stuffed Chicken Breast

Very good dish with lots of flavor. Just watch your cooking time. I overcooked mine slightly and dried it out just a bit. It was still good though but would have been better if it was cooked less. That was my fault though, not the recipe.

Baked Spaghetti Squash with Beef and Veggies

Wow. This was unique and delicious. My husband and I both liked it a lot. I loved the spaghetti squash instead of the typical noodles or pasta. It's healthier too. I will be making it again soon.

Brown Sugar, Mustard-Glazed Ham

Great ham recipe. I made it for Easter dinner and everyone liked it even better than the usual ham with pineapple. The sauce is thick which keeps it on the ham instead of dripping into the pan. It was so simple too.

Sweet and Sour Meatballs III

Awesome! The ingredients do seem weird but the taste is unbelievable and so simple to make. I filled up my crock pot and served them when we had guests over. Everyone loved them. We had plenty left over only but for a couple of days since we couldn't stop eating them.

Angel Hair Pasta with Shrimp and Basil

Wow! This dish is amazing. I didn't think it would be this good since the ingredients seemed kind of simple but it was terrific. I definitely recommend using raw shrimp instead of previously cooked or bagged frozen shrimp. Make sure you don't overcook it too. When shrimp is cooked just right it tastes so much better and has that nice crunch when you bite into it. Use a dry white wine as recommended too. This recipe was perfect. We just added a bit more shrimp and I had the leftovers for lunch the following day.

Kielbasa with Peppers and Potatoes

Delicious! I added some chopped onions and used low fat Polska Kielbasa made by Healthy Choice. I also used less cheese. Other than that I kept the recipe the same. I did need to use the oil since I used the low fat kielbasa. It wasn't greasy in any way. The potatoes soak up the flavor of the juices nicely. I will definitely make this again.
