Red Lentil Curry

Reviewed: Mar. 24, 2009
This is fabulous. Very quick and easy! I followed the recipe, only substituting tomato sauce for the tomato puree. The puree would have made a nicer texture but this was still SOOOO good. Will definitely make again! Thank you!

Zucchini Yogurt Multigrain Muffins

Reviewed: Feb. 23, 2009
May be the best muffins I have ever made! Some changes were that I used all whole wheat flour, quick cooking oats instead of oat flour, 1/4 cup sugar and 1/2 cup honey, only 2 eggs & no applesauce. They turned out perfectly. Will make these over and over again!

Garlicky Baked Butternut Squash

Reviewed: Feb. 28, 2009
Mmmm... fantastic. Worth the hassle of peeling the squash. I took the advice of another reviewer and microwaved the squash first which made the job much easier.

Slow Cooker Spinach Marinara Sauce

Reviewed: Jun. 25, 2009
I'm saying 5 stars with my minimal revisions. I used a package of frozen spinach and DID NOT thaw or drain, just threw it in as it was. I think that is what kept it from being too thick. Also I only used 1 6oz can of tomato paste. Also only added a sprinkling of S&P at the end of cooking. It was so delicious. My brother said it was better than store-bought!

Baked Teriyaki Chicken

Reviewed: Jun. 25, 2009
Absolutely amazing. Best chicken ever! I did double the sauce like other reviewers suggested, but only used 1/4 cup of sugar. And I used fresh ginger. Served over brown rice with broccoli. I'm having leftovers for lunch today, can't wait.

All American Apple Pie

Reviewed: Aug. 23, 2009
Awesome! Definitely put a cookie sheet under the pie to catch drippings. However do not put it directly under the pie (as I did) and instead put it on the next oven rack down. I had to keep mine in the oven a lot longer for this mistake! But in the end it was absolutely delicious with rave reviews from my family!

Ten Minute Enchilada Sauce

Reviewed: Aug. 25, 2009
Amazing! So easy to make. I can never seem to find canned enchilada sauce at the grocery store when I need it, but now I will just use this recipe.

Curried Chicken and Brown Rice Casserole

Reviewed: Jan. 17, 2010
This was excellent! I used regular brown rice and cooked it all on the stovetop in about 55 minutes. I also had to add another 1/2 cup or so of boiling water near the end of cooking time. I cooked the chicken seperately in oil and seasoned with salt, pepper and curry powder and then mixed it in once the rice was cooked. Will definitely make again!

Oven Fries

Reviewed: Nov. 27, 2010
These are awesome! Just the right amount of spice with the cayenne. I used more oil, just eye-balled it in the bowl, and baking time was more than 30 minutes for sure. After 30 mins I turned them, then continued baking for another 20, and they were perfect.

Pumpkin Muffins II

Reviewed: Nov. 12, 2008
These turned out excellent. They made 16 and were moist right to the last one, about a week old. I only used half the amount of cloves because I was afraid it would be too strong, but I think I would use the correct amount next time.

Lemon Blueberry Drop Scones

Reviewed: Apr. 10, 2011
Awesome. Made with whole wheat flour and they are still really nice. Also had to use blueberry yogurt since it's what I had on hand, they are great so I'm sure that the lemon yogurt would taste amazing.

Flax and Sunflower Seed Bread

Reviewed: Jun. 20, 2011
This is THE BEST bread I have made with my bread maker yet, healthy but not heavy or dense. Fantastic for sandwiches and toasted too of course. The only small changes I made were substituting olive oil for the butter, using 2 tablespoons of gluten flour (reducing bread flour by 2 tablespoons) and a pkg of yeast. Making this again now for the second time this week. Thank you!

Chocolate Chip Peppermint Cookies

Reviewed: Jul. 4, 2011
These are phenomenal. The ONLY thing I suggest is as others have done, reduce baking time. 10 mins max in the oven, then let them sit for a few mins before transferring them to a cooling rack.
