Pasta with Vegetables

Lentil Soup I

While not a pretty soup, was very tasty and satisfying. I have never put mashed potatoes in a soup before, but I thought it was a great addition. I added an onion and 2 cloves of garlic, and used a small amount of powdered cloves instead of whole cloves.

Molasses Bran Muffins

Pretty good! I used whole wheat flour and substituted apple sauce for the oil just for a little extra healthiness. Also I didn't have raisins on hand, so I used an equal amount of cinnamon chips instead which was a nice taste.

Broccoli and Rice Stir Fry

I didn't expect greatness from this recipe but I was pleasantly suprised! Very simple but I really enjoyed it. I used brown rice and added sesame oil to the cooking water to give more of an Asian taste. Also used fresh broccoli. Thanks for a tasty and simple recipe!

Lentil Chili

I have made this recipe a number of times now. This recipe takes no times to make and is a much healthier alternative to the original! I add a little grated cheese and sour cream as garnish. I will make this over and over, thanks!

Sri Lankan Potato Curry

I made this recipe using the powdered version of all the spices (exept garlic) and it turned out great. I used the same measurements for the powdered spices. Next time though I will microwave the potatoes longer so they are basically done - I found the recipe took a lot longer as the potatoes took a while to cook in the pan. But still so tasty!

Chicken In Basil Cream

This recipe did not do it for me. I would suggest frying the chicken in a non stick pan, as the bread crumbs on my chicken ended up sticking to the pan and making a mess of the cream sauce. The sauce was too thick and ended up looking like a glob on top of the chicken. It did taste really good however, but it looked awful!

My Chili

I loved this chili! So tasty! I added a tin of mushrooms and some extra chili powder. Also for some extra goodness I topped it with a little shredded cheddar cheese and a dollop of sour cream, and served with tortilla chips. My boyfriend loved it. I will make this again!

Chickpea and Eggplant Stew

Great use of leftover eggplant! Not spectacular but a nice tasting stew that got better after a few days. I used a cup of tomato sauce instead of diced tomatoes and added chicken boullion, omitting any additional salt. Also omitted salami just because I didn't have it! Probably would have been delicious with it.

Pumpkin Soup

I would like to say 4 or 5 stars, but it was way too peppery! Unfortunately 1 tsp of pepper took away from an otherwise wonderful soup. I would go with 1/4 or 1/2 tsp next time. And I only used 1/2 tsp of nutmeg which in my opinion was the perfect amount. Otherwise, I did adjust this recipe but pretty much stuck with the general idea. I didn't roast the veggies as I found this recipe while in the middle of baking the pumpkin. I just sauteed everything (added 1 clove of chopped garlic) and added vegetable broth and let that cook for 20 minutes before adding pumpkin and blending with the hand-held blender. Because I'm trying to be good, I used plain fat free yogurt in place of the cream and was still good. I think it would have been extra special with cream and the roasted veggies. This is definitely an excellent soup but I would reduce the pepper!
