Fruit Oatmeal Cookie Bars

This is a GREAT recipe, and about as easy and foolproof as it gets. I made them for a pot-luck and they were delicious, and I would most definitely suggest using raspberry jam.

Low-Fat Blueberry Bran Muffins

After reading the reviews for this recipe, I was quite disappointed with the way these muffins came out. They simply didn't taste good, not like real bran muffins. They weren't awful, just not very good. My mother did like them a lot, though.

Coconut Chocolate Jumbles

This is a wonderful recipe. Incredibly easy and absolutely delicious. I didn't have walnuts, and I didn't want to make it too nutty anyway so I just threw a handful of almonds in, and instead of semi-sweet baking chocolate I used milk chocolate chips. They came out great, and more snowball-shaped than flat.

Award Winning Soft Chocolate Chip Cookies

These cookies were okay, but nothing more. There was nothing wrong with them, but I think I'm going to keep looking as far as chocolate chip cookie recipes go. They did keep very well, though. I'd give them a 3.5 if I could, but I guess I'll give them a 4.

Whole Wheat Banana Strawberry Loaf

This came out okay, but not great (I did get some very good reviews, but I think next time I might try a different recipe). I did make some changes, though. I added salt, vanilla and more fruit than stated by the recipe, and I substituted splenda for sugar, egg beaters for eggs and applesauce for all of the oil. Overall there was nothing wrong with it, but I probably won't make it again. I'd give it a 3.5 if I could.

Strawberry Cinnamon Oatmeal Muffins

I got some very good reviews on these muffins, but in my opinion they weren't fantastic. They were very good, however. The main issue was that they stuck to the muffin wrappers a lot, but that was entirely my fault as I substituted all of the oil for applesauce. I also added vanilla, a bit more fruit than suggested, and I substituted sugar with splenda and eggs with egg beaters. Overall, they came out quite well, just not amazingly.

To Die For Blueberry Muffins

These were easy (even for me, a 15-year-old beginner/intermediate baker) and DELICIOUS! I didn't have many blueberries left, so I used a mix of frozen strawberries and frozen raspberries (the raspberries were an exceptionally amazing substitution). I also susbtituted splenda for sugar, egg beaters for eggs, and applesauce for oil, which worked out fine. Lastly, I added a bit more fruit than stated by the recipe. The topping (which I made without butter) was delicious, and the entire recipe in general was a keeper.

Spiced Applesauce Bread

GREAT recipe. I am a 15-year-old and at a beginner/intermediate level in baking, but this recipe was incredibly easy. I did modify the recipe a bit, though. First of all, I had no pecans, but I did add walnuts (about 3/4 cup) and chopped apples (same amount). Second, I used 1 cup whole wheat flower and one cup all-purpose, and instead of using 2 eggs I used 3 egg whites. I only used about 1/8 cup of vegetable oil and substituted the rest with applesauce. I ended up using 1/2 cup BROWN sugar, and I used fat-free soymilk instead of regular. Lastly, I added a pinch of extra salt.I baked the cake at 350 for about 33 minutes. The cake came out looking very nice, having a nice texture and tasting great (you could definitely taste the spices, and I'm very glad I added chopped apples and nuts)
