Simple Scones

I loved this scone. I tried blueberries with lemon zest the first time, and cherries & almonds the second, but these could be delicious plain. I like to brush mine with cream. Thank you for a great recipe.

Extreme Banana Nut Bread 'EBNB'

Loved it! I was worried about using half the flour of my normal recipe, but this was great. Now I almost discourage my kids from eating bananas so that they can get overripe for this recipe!

Very good! I doubled and used one cast iron pan and one calphalon pan - we could look at one all pretty on the table while eating the other. (and then eat the second one, too)

Caramel Bars

Great bar cookies! I followed the recipe except for using 3/4 of crumb mix for bottom and pressing top layer down slightly with bottom of measuring cup. I love them and can barely stay away from them. I may try pecans some time, to kind of get a turtle taste. I thought the caramel taste was great with just a bit of the chocolate and walnut coming through. By using a 9 x 13, you end up with more cookies to go around and can afford to eat a few more. Thanks!

Strawberry Pie II

Worked just as written very well. I was very happy with the results and so was my family. I will definitely use this recipe again, and maybe play with it a bit, but am excited to have found such a simple recipe that I could prepare in the afternoon and have right after dinner. thank you!

Double Chocolate Biscotti

Only added a pinch of salt and loved them. TO CUT - use a chef's knife and just push down through the slices, don't saw back and forth with a serrated knife. I let them cool 10-15 minutes before cutting, but didn't notice the lower temp for the 2d and 3d baking and ended up with a couple slightly burnt ends, but they were yummy dunked in coffee. I might add vanilla or powdered espresso next time, and maybe nuts and bittersweet chips. I'll definitely keep this recipe - was about to make more today but think I'll wait after just eating 5 with a pot of coffee - buzz buzz buzz!

Best Chocolate Chip Cookies

LOVE IT! I had to make chocolate chip cookies last week and went searching for a recipe and found this one. I wanted a bigger, though traditional cookie, and this was perfect. I just watched something on Food network where someone omitted the vanilla, so that was the only change I made. My cookies may have been a bit big, I rolled them into 1.5 inch balls and baked for 15 minutes until barely brown along the edges.

Coffee Liqueur Ice Cream Pie

I loved it and our guests loved it. I used an Oreo store bought crust which made it even easier. I didn't have chocolate ice cream, so added chocolate syrup to the top layer of ice cream with the Kahlua. Watch out for that middle chocolate layer - it will get you. Perfect to take to someone's house - easy, impressive, yummy!

Chicken Tortilla Soup V

Loved it. Easy. Quick. I cooked my frozen chicken breasts in some broth and a little water for about 30 minutes and then shredded it. I added more cumin and chili powder and a fresh diced tomato along with a few tablespoons of a green salsa in addition to the cup of regular jar salsa. I was so happy that I had everything on hand. I will definitely make this recipe again and again.

Kellogg's® Rice Krispies Treats® Holiday House

This was fun for me and my four-year-old son to decorate together. He decided we wanted a green house, but I put the food coloring in the base batch. It turned out fine since it just makes it look like grass. I was a little frustrated with the somewhat unclear cutting instructions and wish it would have mentioned evening out the sides after baking them and angling edges so that the roof pieces would fit together better. The icing fills in the gaps pretty well, though. We added powdered sugar at the end which looked nice. This makes me wonder how difficult a gingerbread house would be - this was my first attempt at such a holiday project and it wasn't too time consuming or difficult since it's just rice krispie treats.

Winter Energy Cookies

Of course I had to mess with the recipe a little bit - I used half butter/half applesauce, dates instead of raisins, 2T soy flour with the AP flour, a little coconut, not as much chips and walnuts as called for, and processed the oats a bit first. My pickiest 3 year-old actually ate 3 of these and he eats nothing that looks out of the ordinary. I took these to a meeting and everyone loved them. I will definitely keep this recipe. I'm always trying to add a little of the healthy stuff in cookie recipes and this combination works very well! Thanks!

Easy Granola Bars

I've been trying granola bar recipes and this is the first one that stayed together. Be sure to cut them early and maybe line your pan with parchment. They are a bit tough to get out. I used blueberries and cherries, and a five grain oat mix. Yummy! (update 7/2012) I used old fashioned oats and toasted them a bit as someone else suggested, did not use butter, added a pinch of salt, and warmed the milk can in hot water. I used a jelly roll pan with parchment, but didn't spread to the edges, just formed a square, baked for 18 minutes, ran a pizza cutter through right away, then let cool. Love them.

Creamy Blueberry Pie

Very good pie. I've always been afraid to make blueberry pie, but this was very easy and very good. I used a frozen pie shell that was not a deep dish crust, so I used just under 3 cups of berries and didn't pour all of the filling in and though it shouldn't have mattered, I didn't use all of the topping. I started at 375 and turned it down after 20 minutes, went a total of 60 minutes probably, and should have tried to cover the edges with foil at the beginning, but it didn't get too dark. Didn't have to wait for it to cool completely either and my husband and I each had two pieces. I really liked it, although I wasn't totally astounded so didn't give 5 stars.
