Butternut Squash Casserole

Tried this on 2/24/12. Did make some modifications but only for convenience. Don't think it affected the results. Following another reviewer's (Tricky835) lead, I cut the squash in half, removed the seeds and baked it (cut side down) until it was soft. Used a potato masher instead of a blender and everything came out just great! Also, I added the cinnamon, nutmeg to the cooked squash. THE surprise of the event was the scrumptiousness of the topping. This will become a regular in our household.

Bubba's Jambalaya with okra and big shrimp.

Fixed this for a New Year's eve party and to a person everyone loved it. Followed the recipe as closely as possible. Made my own chicken broth by deboning and boiling down the large breast bone/skin. I did add about 1/2 package of frozen cut okra about 4 minutes before adding my cut up shrimp (16-20count) and saved 8 of the shrimp to garnish the top. I chose to sprinkle the bacon on top rather than mix it up in the dish as called for. I think I was true enough to the recipe that this is a "true" five stars. Thanks for such a great recipe.

Roasted Root Vegetables With Apple Juice

It seems very obvious that several commenters don't really understand what a root vegetable is. The squash, brussle sprouts, etc. just don't cut it. I love this recipe and usually do it in one large pan.

Marinated Pork Roast with Currant Sauce

I followed this recipe up until the point that I opened the oven to baste it after the first hour. The marinade in the pan (actually a pyrex dish) was burned to a crisp. Luckily the roast was on a rack so it was saved from the burnt marinade. Also, the roast (a 4.8 lb pork tenderloin) was sitting at 165 degrees so I could not leave it for the specified 2.5 - 3 hrs or it would have been leather.

Roasted Pork Loin

I followed the directions and was going to cook the roast (a 4.5 lb pork tenderloin) for the stated time. I checked it at 1 hr and 5 mins and found it done! Not sure where the disconnect is, but the time seems way off to me. The roast was delicious!
