Wonderful Banana Cake

Super easy. Super good. I live at high altitude and followed those directions for the cake mix. No problems. We used a tub of purchased cholocate frosting on top, but be careful!! this cake is very moist.

Power Cookies

I recommend you DON'T DRAIN AND RINSE THE BEANS!! My cookies turned out fine without any additions. I inadvertently halved the sugar, but they still tasted fine. I used all raisins for half, and all choc chips in other half - cookie scooped half, rolled other half between 2 pieces of parchment paper and cut in squares. 48 cookies

Japanese Beef Stir-Fry

This was surprisingly easy to make and very good too. All my picky's ate this dish, so I know I will make it again. I was fresh out of Chinese cabbage, so I substituted broccoli for a delicious dinner.

Marshmallow Hot Fudge Sauce

A great way to use those half dry marshmallows! This sauce is easy, very adaptable, and oh so good on strawberry ice cream! I also had some unsweetened chocolate squares which I melted in with this recipe.

Mixed Greens and Peppers

I've been making green juice, so when I found this recipe, I decided to modify it for juicing. First, I reduced the recipe to half to produce one glass of juice. Omit the oil, salt and sauce. Here goes: kale, rainbow chard, bell pepper, leek. I added 1/2 cucumber, 1/2 red apple, and one jalapeno. The apple & jalapeno produce the sweet & spicy effect.

Elbow Macaroni and Kidney Bean Salad

This is wonderful. I'm sitting at my table eating this right now for my lunch. I used green onions instead of regular for a milder flavor. Followed the rest of the recipe, tasted and it was good. Then I decided to add more veggies: peas & carrots, more parsley, red bell pepper. Think of this as a Bean & Veggie Salad with some pasta in it. I have been trying to add more veggies into my diet and this is very helpful. Thank you for sharing Jennifer. Update: I made this again, this time using whole wheat macaroni.

Thanksgiving Spinach Salad

I've been on a green juice adventure, and decided to use your recipe to make a glass of veggie juice. I did have to tweek it just a bit. Raw cranberries, don't peal the apple, green onions, 1/2 lemon, and the spinach (or whatever greens you have). If too tart, add another apple or some grapes. Some day I'll make the salad, but for now, I'm drinking it!

Grilled Lemon Herb Pork Chops

I was looking for seomthing to do with my chops, had all the ingredients, and decided to give this a try. I did sub garlic powder for the minced - it's what I had. The chops were moist, tender, and whole family liked them.

Oven Scrambled Eggs

I adjusted to 4 servings and used 9X9 pan. These were delicious, fluffy, easy. My only changes were to use 1/2 canola oil and 1/2 Smart Balance, and 1% milk. I will definitely make this again.

Simple Pesto Pasta

I like recipes that are easy and good, and this surely is. I added a couple tablespoons of fat free sour cream for creamy pesto sauce, and served with rotini pasta. Thanks MOMof5.

Roasted Brussels Sprouts

Very good. Even got my husband to eat a couple. I didn't want to heat the house up though so I started them in the microwave and then put under the broiler. Could also use a grill basket for outdoors. Also, I nixed the salt and added onion powder, garlic powder, and a few shakes of parmesan cheese.

Easy, Cheesy Tortellini Bake

Easy and good is a winning combination. I left out the spinach - kids. The spices are easy to adjust to whatever you have on hand. And I used much less cheese. Kids and husband all cleaned their plates. I'll add this one to the regular recipe rotation.

Sugar Cookie Frosting

I gave this frosting a try because my usual butter frosting makes cookies stick together. I made 6 dozen a few days ago and the cookies still look nice and no sticking. Thank you.
