Souper Simple Mac 'n' Cheese

I was skeptical but tried it. Mr C & I thought it tasted ok, but my teens both said it was bland. It needs some extra spice or additional flavor. It was a good back up plan for tonight, but I won't be making this often.

Lower Fat Banana Bread II

Made this exactly as written plus 1 Tbsp extra flour to adjust for high altitude. It's delicious. I'm eating a piece now, warm from the oven. Thank you for sharing.

Quick and Easy Pizza Crust

Excellent! This is the first time I have ever made homemade pizza (and it's Christmas Eve). I had a little trouble trying to press out the dough with my hands, so next time I think I'll use a rolling pin. Thank you.

Sugar Cookie Frosting

I gave this frosting a try because my usual butter frosting makes cookies stick together. I made 6 dozen a few days ago and the cookies still look nice and no sticking. Thank you.

Broccoli Chicken Divan

This is a very good and flexible casserole. Use whatever cream soup you have, fresh or frozen broccoli (I like florets), experiment with different spices. I added some sauteed onion, and 1/2 cup sour cream, but it would have been fine without too. Edit 12/2013: Made with left over turkey and added some rosemary - yummy.

Bacon for the Family or a Crowd

This took about half hour to cook and still wasn't "crispy." However, I used a broiler pan so the fat would drip down through the holes.

Oven Scrambled Eggs

I adjusted to 4 servings and used 9X9 pan. These were delicious, fluffy, easy. My only changes were to use 1/2 canola oil and 1/2 Smart Balance, and 1% milk. I will definitely make this again.

Pork Tenderloin Diane

Really quite tasty. The sauce is kind of a deglazer and since I don't cook with alcohol, this combination of ingrediants worked out very well. I just followed the recipe. The only minor variation was that I mixed the mustard, worchesterchire, and lemon juice in a small bowl before adding it to the pan. Both my teens liked this so I will be making it again.

Spaghetti Squash I

This was ok - not good or bad really. We had this for lunch, which I put into a wrap. I did make the squash in the microwave as suggested by Joann74, and that worked well. I probably won't make it again, but it's fun to try something new. Thanks.

Hot German Potato Salad Casserole

Recipe Group. I scaled back to 1/2 recipe and made this for my lunch. I sauteed the onions & celery in some of the bacon grease as suggested by Christina, and I use Miracle Whip instead of mayo (less calories & fat), and only 1/4t salt. This was very easy to put together, and store in the fridge until I was ready to cook. This was a delicious change of pace from the usual sandwiches. Thanks!

Banana Oat Bars

These are easy, good, and guilt free. I added 1 TBSP of whole wheat flour just because I live at high altitude and it's kind of a habit to do so. The 9x9 pan works great.

Salsa Chicken

I took the suggestion of JOESTRATA, and merinated the chicken in taco seasoning & water. I loved this, as did my picky eaters, but... when i took the chicken out of the marinade, it no longer needed the salsa, so I backed off one star because without the salsa, it's not really "salsa chicken." A side note: When I removed the chicken breasts from the taco seasoning marinade, they looked exactly like the chicken we see on the grill at Qdouba and tasted like it too.

Rosemary Ranch Chicken Kabobs

Just made these for dinner tonight. Started with a foil grill pan on the grill as another suggeted, then moved them directly onto the grill at the end to get some grill lines and a finished appearance. We ate them, but I probably won't make this again. It's always fun to try something different. Thanks for sharing.
